To make nitroglycerine, just google "make nitroglycerine" :-) In this clip however, MacGyver most probably used Sodium chlorate and sugar. So, not dynamite, and without a pressure container, it would most likely just defraglate, and probably would not work at all without mixing.
Bad guys always miss all of the shots in a pursuit. It's unbelievable. It also happens in every movie, McGyver, Van Damme, Stallone, Schwartzenegger, you name it.
