Broiled Chocolate Chip Cookies

  • Broiled Chocolate Chip Cookies
    Two sticks salted butter
    Two cups sugar
    Tablespoon molasses
    Two eggs
    Tablespoon vanilla extract
    Two teaspoons salt
    Teaspoon baking soda
    Two-and-a-half cups bread flour
    12-ounce bag chocolate chips
    Melt the butter completely before mixing in the sugar, molasses, eggs and vanilla until smooth. Mix in the baking soda and two cups of the flour. Add more flour until dough appears wet but is not terribly sticky. Refrigerate dough for at least 30 min.
    Pre-heat oven to 375 Fahrenheit.
    Form the chilled dough into balls the size of golf balls. Smash them into the shapes of hockey pucks and place them on parchment-lined baking sheets. This should yield about 18 big cookies, spread across three pans.
    Turn on the broiler and broil the tops of the cookies, one pan at a time on a high rack, until golden. Return the oven to 375 on its baking mode, allow the broiler to cool for a moment, then bake the cookies for 10-12 minutes.
    MY COOKING PHILOSOPHY:
    I don't like weighing or measuring things if I don't have to, and I don't like to be constantly checking a recipe as I cook. I don't care that volume is a bad way of measuring things - it's usually easier. I like for a recipe to get me in the ballpark, and then I like to eyeball and improvise the rest. If you're like me, my goal with these videos is to give you a sense of how the food should look and feel as you're cooking it, rather than give you a refined formula to reproduce.

    I had attempted to make these a few weeks ago using all-purpose flour instead of bread flour (didn't want to commit to a whole bag of bread flour just for this). While the cookies tasted good, the broiler part didn't work and the cookies ended up "melting" outward and looking more like pancakes. This past weekend I tried again and they worked great! I used bread flour this time and made the following modifications:
    -About 1.5 tsp of salt
    -About 2.25 cups of bread flour
    -After refrigerating the dough, I made the hockey pucks, then put them back in the refrigerator for 5-10 minutes.
    -I Heated up the broiler (I have a gas broiler), took the hockey pucks from the refrigerator directly to the pan and to the broiler, and broiled the cookies for about 90 seconds.
    -Finally, I took them out, switched the oven back to 350 Convection Bake, and baked the cookies for about 12 minutes.
    Best chocolate chip cookies ever! The people I shared them with thought I bought them from the bakery across the street! Thanks for coming up with this crazy recipe!

      I faced this same problem last night. Anyways, idk if it was adams recipe or the broiling but even despite that pancake happening, they were crispy on the outside and chewy on the inside - and thin! They were really good!

      My oven runs on the hot side, so I really didn't need the broiler because there was no gray hue at the end of baking. I also used all-purpose flour and they turned out super delicious and still soft on the inside. I might use a little less salt next time though, the butter is salty.

    im currently in the process of making these. i'm at the part where you have to wait 30 long minutes to chill them and after licking the dough off of the spatula these are probably gonna be the best cookies ive ever made so thanks.
    EDIT: don't use wax paper, I was met with an actual fire so.... my stupid fault.

      People calling parchment paper "wax paper" has probably resulted in more kitchen fires than anything. They are two VERY different things, I'm very glad I was taught that in school and so so wish more people would teach people that because so many people don't know.

    here, his recipe didn't have a 15 minute backstory, he gave straightforward instructions that turn out fine when eyeballing, he did everything quick but still made it so there is time to pause the video for instructions, one right after another, no explanation to why they do it, and made it so you can customize it yourself. this is the way recipes were made to be shared. you are the king now.

    Thank you so much for this recipe!
    Here are some of my adaptations:
    Half brown sugar and white sugar for a total of 1-3/4 cups (I don't like them too sweet)
    A good teaspoon of instant coffee powder (makes the chocolate richer)
    And instead of chocolate chips, I cut up a whole 375 gram bar of dark baking chocolate.
    It took a bit of experimenting, but they're the best cookies I've ever made!

    Adam, these cookies are AMAZING. I keep coming back to this recipe because it’s so simple to remember. The only modifications I’ve made are brown the butter (you have to melt it anyway, so why not) and add a little instant coffee packet or a tablespoon of strong coffee. After the chill I roll them up and freeze them! I can never justify making a huge batch of cookies at once! Thanks again for the recipe!

    today i made these cookies as my first baking project. Normally my older brother (who is the baker of the family) likes them very thin and underdone but no one else really likes them like that. But when i made these my whole family was impressed on how good the texture was. I would definitely advise more people to make them this way!

    I make the dough (just as anyone would) and right before I go to put it into the pan for baking, I simply take the largest serving spoon I can find, scoop out a very big mound of cookie dough, and then I shove it down my throat. That's how I make the perfect cookies. R A W

    I followed this recipe, and damn it was really delicious, especially the following day after I baked the cookies. The insides were so chewy, it reminded me of the texture Subway cookies have.
    I didn't have any chocolate chips, and it's out of stock in the stores I went to, so instead I substituted the chocolate chips with chopped chocolate bar. The end result was delicious nonetheless, especially since the dough's taste, consistency and texture were on point to begin with!
    For the first batch, I overbaked them too much and it made the cookie really hard and crispy on the outside. However, the next day, the cookies softened and they were as delicious as the other batch of cookies that weren't overbaked.

      Yea rough chopped dark chocolate bars, I usually go about 70% cacao, take chocolate chip cookies to the next level. Also adding a little flakey/maldon salt to the top of them as soon as they come out adds a little more texture and saltiness which I personally love 🤷‍♂️

    Measurements for my sake:
    16 tablespoons of butter
    16 tablespoons of sugar
    2 eggs
    Teaspoon of baking soda
    2 teaspoons of salt
    40 tablespoons of flour (2.5 cups)
    Bake at 190⁰ for 12 minutes
    Makes 24 cookies either high if you leave it in a ball, or just a bit bigger than subway cookies if you smash the dough
    down

      Maybe it's because the appearance doesn't affect the taste and it's incredibly simple to do. Making no crack('beautiful') macaroons are much harder to make than ones that look ugly but taste probably better.

    Made the cookies today. Didn't have Molasses so substituted with Honey as it was the closet thing I had on hand. They came out delicious! One tip for newbies, really watch that broiler because they go from golden to burnt top faster than you'd think. Also try a batch with butterscotch chips instead of chocolate chips they are amazing!

    So I’m a real live retired pastry chef and as I was watching from down my nose with a bit of a arrogance a couple of things happened. Firstly I am really impressed with your presentation well done! Second, my first thought of the idea of putting cookies under the broiler was risky at best and surely a bad idea. I am humbly admitting and pleasantly surprised that these are the best chocolate chip cookies I have ever made and tasted! I made 2 batches this morning and EVERYONE is raving about them! I did reduce the salt by 1 tsp but that’s for health reasons not taste. So well done and thank you so much for sharing. From a pleasantly surprised skeptic..

    The dough is currently in my fridge. I used 200 grams of chocolate and a little bit less sugar because I am from Europe so I am not used to American food 😭
    Here is my review if I remember it:
    They were really good. I did the first batch at 11 min and the second at 15 min (totally on purpose), and I preferred the 15 minute ones: they were crispier and had better structural integrity. Overall amazing cookies 👍

      @@randymarsh4748 iirc, the Toll House recipe is 3/4 cup white and 3/4 cup brown. You can make your own brown sugar by mixing one tablespoon molasses into one cup white sugar. To be honest, I don't know the proportions used in commercially bought brown sugar, but it's similar.

      NO, Alton Brown is specific, scientific, and precise. He would never say, a "glob of molasses." Cooking is an art, true, but baking is a science.

    i made these and they turned out fantastic- but ive noticed that the dough can be kind of tempermental once theyre in the oven. letting the broiler cool is ESSENTIAL (made that mistake with a batch, rip cookies) as is moving them closer to the bottom of the oven. all around 9/10
