The giants in this case were bloodfiends of a multi-armed bloodstream/family, who had gorged on so much blood that they bloated up to gigantic size. Giants do also exist though, they're a species of monsters in the outskirts, as the Christmas intervallo showed us.

Limbus Company really is the greatest gacha game ever made. The pure awe and emotions I felt towards the end is something I never would’ve expected going into this game.
