I have made this recipe as well as the traditional on both using basmati rice as that is what I have, both times I needed to add extra water as it was drying down and rice was still hard, I always end with a wet mush! Any suggestions would be helpful from anyone, thank you.

Do Carribeans in general prefer Indian influenced dishes/cooking techniques? I understand there might be some cultural similarities. Some recipes like pulao, Chana are also famous Indian dishes.
+AD828 I can speak on behalf of Trinidad and Tobago...We're a multi-ethnic country so our cultures intermingle especially when it comes to food and cooking. We use a lot of curry and grains such as Channa (chick peas) for example and we also use a lot of provision also. Pealu however is more Afro influenced.
+Shammi Williams it would be interesting topic of discussion as you see elements of our African heritage (west Africa) Jollof, Indian heritage in biryani and Spanish (our colonizers) Palella, in pelau. However our inclusion (or uniqueness) adding coconut milk and brown stewing (sugar as with traditional pelau) is what I think makes this dish so "Caribbean"
+caribbeanpot yes I absolutely agree. I love your takes on different dishes but the moment you called it pelau..I was like wait a minute...we call it pulao! Except of course, we don't add coconut milk. I'm Indian so I was curious. It's nice to learn from different cultures

How many cups of water and how many cups of rice do you add?

in Trinidad the majority of the population are from indian descent
