- I cook a perfect pizza in the Le Feu gas fired pizza oven. This oven comes from Denmark and is well constructed. Cooks evenly and performs very well. Easy to use and is perfect for entertaing or commercial use. Dough Recipe below.

Dough Recipe:
Biga
337g 00 flour (W330)
152g Very Cold Water
1.5g Instant Dry Yeast
Mix Roughly, rest 1 hr on bench and 12-18hrs in fridge or 18hrs at 18 Celsius
Dough
337g 00 Flour (W280)
333g Cold Water
17g Sea salt
1. Add flour and Biga to bowl and add water little by little (slow speed in a mixer) until combined
2. (increase speed in a mixer) Add salt and add rest of water little by little
3. Mix until strong or 24-26 Celsius
4. Rest in bulk 6 hrs in fridge
5. Make 4 x 280g balls and rest minimum 4 hrs room temp

Get the floor to 420celsius, put the pizza in and then turn the flame to low immediately and keep turning the pizza.

Hi yes it’s a solid built oven, good for pizza only but you need to learn how to use it.
