Ep 12: Pt 4. Making Pizza in the Wood Fired Oven

- In Part 4 of the Pizza series I show you how I make pizzas in the Wood Fired Oven.
Margherita
Tomato sauce, fresh mozzarella, olive oil.
Add fresh basil and olive oil after it has come out of the oven.
Pancetta with dill
Fontina cheese and sliced pancetta.
Once out of the oven add some dill, and olive oil.
Mushroom
Tomato sauce and Fontina Cheese.
Medley of mushrooms including button, shitake and morels.
Some sage and dried oregano.
Sausage pizza
Pork fennel sausage partially cooked, whipped burrata.
A mixture of sliced shallots, fennel, and leeks,
and some Fennel powder.
Pepperoni or Chorizo
Tomato sauce and grated mozzarella
Pepperoni or Chorizo, thin slices of red pepper (optional).
Potato and rosemary
Fontina cheese, and thinly sliced potatoes, rosemary, and olive oil.
Anchovy
Fontina cheese, sautéed onions, anchovies, black olives, and capers.
Pizza with Ricotta and Rosemary Pesto
Begin with garlic confit, chopped rosemary, and olive oil.
Just before the pizza is done sprinkle over some toasted pine nuts.
When the pizza is done add dollops of ricotta and rosemary pesto.
Pizza Pomodoro
A selection of roasted tomatoes, Mozzarella cheese,
some garlic that I’ve poached in olive oil, grated parmesan cheese, and olive oil.
When it comes out of the oven add some fresh basil
Prosciutto di Parma
Tomato sauce and fresh mozzarella.
When it comes out of the oven sprinkle over arugula and lay on slices of Prosciutto
Herb pizza
Fontina cheese, dried oregano, and a selection of fresh herbs including
Thyme, Sage, Parsley, Tarragon, Chives, cilantro, and fresh basil that
I’ll sprinkle over the pizza once it comes out of the oven.
And then lastly, I think it’s very important that you stay hydrated while making pizza,
so try to have a lovely bottle of Barbaresco on hand.
I just realized I've been binge watching this channel for about 2 hours, and I still want more. Your easy going manner, the romantic setting and the guitar music make these videos a relaxing little respite from the noise and distractions of life. So glad I found this.

I thought we made unusual pizza's but you've got me beat! But I've written down all your combo's and my friends will go crazy! They think my basic Margherita is the best pizza ever. Just spent the last 5 or 6 weeks building my wood-fired oven. Have enjoyed all your videos so far but this series of four on pizzas has been a life saver as I could not even begin to imagine how to prepare so many pizzas that you obviously have to cook to justify firing an oven like this. I can’t think of a better way to start a Friday than watching these four brilliantly produced videos. Extremely good timing as well as I have my dough in the fridge already for tomorrow night. Usually make my dough early morning for same evening but thought I’d try the ‘three days in the fridge’ method. I’ll update tomorrow as to whether it makes a noticeable difference.
Your toppings ideas here provide a really inspiring variety and will impress my family greatly. Of course I will be giving the Wood Fired Oven Chef full credit ;-)

Clive, Just love watching your videos and would love to see a seafood special. Tried your clam dish that was superb. I always have great success with squid (extremely high temp), prawns, and whole grilled/baked fish. I also do quite a bit of warm smoking of fish but our neighbours are less enthusiastic about that. +1 for a bread series! You mentioned in your first video about cleaning out the coals and making bread in the residual heat. It sounds very cool but makes you wonder about handling the coals, and without the fire making it look good. I'm sure it comes out looking amazing. Seems challenging! it also seems like a terrific way to make fresh bread for a restaurant for the next day!

2:38 I find everything else easy, but this is the part I am trying to master. The dough is evenly distributed and a good circular shape is achieved. Harder than it looks!
Takes practice NGO. I had many ugly looking pies before finding a technique that worked.
I followed al videos' steps and it was amazing. Thank you! I made my wood oven and patiently learning each time I used it. But I was waiting this, today I made the pizzas. First one was a disaster, lol. But the sixth one was amazing. My wife support me all the time and she even made the 6th!. Better than my 5th. Each time improving. We change a little bit the technic, though. Putting a little while first the dough without the toppings in the oven. We are super fans of you!. We had indeed a lot of fun. These videos don't age.
Thanks for letting me know about your pizza adventure Erick. The more you use your oven the greater your understanding of how it performs, and what it’s capable of, and your instincts will become more in tune with it when you’re cooking. The first pizza is usually a disaster 😂

Clive the end of Part 4 is the best. Company. Our ovens are so much better with people to enjoy them with. That said..... These videos are absolutely amazing. It is winter in New Zealand and my poor oven is sitting unused waiting for the summer air to roll in. I will definitely be trying out your dough recipe, the explanation of how you shape the bases was incredible, I've never been able to do that. Soooooo much gold in this 4 part series, this will take me to a new level. Your content is just so great, and the interactions at the end of each are great also. Thank you sooooo much for making these videos, they are just incredible. Also, as someone else has said - being a videographer and editor myself, I KNOW how long these take to shoot and edit, so thank you for your work. Top stuff. I love watching your videos on the wood fired oven. I miss my New Mexico Pizza oven so much! Sorry to say the woman who purchased my house was afraid of mice in the wood storage underneath and had the just beautiful oven removed. I have never been madder in my life at someone! I live in Portugal now and a new oven will be on the todo list when we purchase a new home here sometime this year! We always cooked eight pizzas with each firing. My neighbors loved our pizza parties.

Clive thanks so much for putting these together. They are majestic. I shall return again and again when my days are looking a bit grey as this is how life should be celebrated. I'm in the process of building my pizza over in the back yard, and look forward to your future videos where you teach us how to make a statue for our generous and patient wives for allowing us to have such a wonderful toys :).
