  • Sri Lanka produces around 22 metric tons of cinnamon every year. However, it isn’t the same cinnamon found on most people’s spice racks. It’s over 10 times as expensive and requires long, backbreaking work to harvest and process. Known as Ceylon cinnamon, it’s referred to by many as “true” cinnamon. But Ceylon’s cheaper, inferior alternative, called cassia cinnamon, dominates the world market, as it’s easily grown throughout Southeast Asia. We visited one of Sri Lanka’s largest Ceylon cinnamon producers to learn what it takes to make one of the world’s most valuable spices.

Cassia cinnamon - the Chinese stuff, and what's on store shelves generally - has its place if you're after that intense sort of spicy element. But that's the very thing many dislike about 'cinnamon' stuff. Sri Lankan lacks that harshness and is just mellow and sweet. Much nicer for most uses. I keep some sticks around now.

Information in this video is misleading and does not research more deeply.
The coumarin content of casia cinnamon is a maximum of 0.2%, only 10 times that of ceylon cinnamon.
With such content, if you consume 2 tablespoons every day, it is still within safe limits for health.
However, casia cinnamon is more aromatic, the taste and aroma are much more attractive than Ceylon cinnamon.
Casia cinnamon contains active substances for preventing diabetes and lowering blood pressure, much higher than Ceylon cinnamon.
So cassia cinnamon is preferred and widely used by companies in the world that produce phytopharmaceutical ingredients.

@@ranahagrotech1681 so you've just told us that Cassia is better for making drugs? That's nice, but we were talking about food. And having 10 times more of a dangerous chemical is a significant result. It means you can eat 10 times less. Don't act like that's not a difference. And YOU may find the strong aroma of cassia pleasing, but the video is not being misinformative by reporting that most people disagree with you. I think you're just feeling a certain way about your opinion not being shared.

Once I learned the difference many years ago, I've never bought anything other than pure Sri Lankan (Ceylon) cinnamon. To me it's worth the price, especially given it's history and coveted status. I don't like buying knockoffs, especially if they might be potentially harmful. Considering how much I put cinnamon in so many of my dishes from stews, soups, BBQ spice rubs, hot chocolate, coffee, milk shakes, homemade ice cream, baked goods.. I go thru a lot of Ceylon cinnamon. I feel better knowing that I'm directly contributing to small scale farms.

Take care whom you buy Ceylon cinnamon. Several years ago my cousins went to Sri Lanka on a holiday. As tourists who trusted too much they got totally ripped off when buying the powder. I buy the quills as it is easier to know the difference - and powder a little at a time. I also use the casia variety (stick form, not powder) for Indian cooking. It has a stronger flavour and gives Indian rice dishes a pleasant flavour.
True cinnamon or the Ceylon cinnamon has a very mild flavour and also a different fragrance. I use the Ceylon cinnamon powder for French Toast and baked goods.

I use Ceylon cinnamon mostly for drinks (including bandrek and masala chai mix), desserts and pastry baking applications, but the only exception is hummus. For savory applications and in most other spice mixes, I use cassia from China, Indonesia, India, and Philippines.
There are subtle differences in these cinnamon species. Where cassia has stronger cinnamaldehyde flavor, Ceylon cinnamon has a more toned-down cinnamaldehyde taste with subtle hints of bubblegum, orange peel, and resin.

Right?? Not to mention that even with their intentionally fear-monger-y framing, the risk of liver damage is only present when consistently eating large volumes for weeks at a time. Plenty of things do that, cassia cinnamon ain't special.
I don't think it was necessarily to act like the cassia cinnamon variety is some sort of bogeyman in order to highlight the Ceylon. Both are "real" cinnamon, both have their own specialty uses and flavor profiles, no need to act like one's an insidious plague on humanity

Direct to consumer via the internet is the way to go. The producer/seller can dictate the minimum sale and just start out with a relatively large minimum order, and as their logistics and export expertise increases, add sales of small quantities that the end users would buy. You will have a direct relationship with your customer and no one in between

Some people say Cassia is also Cinnamon. But true Cinnamon is a defferent species, and they cultivate it specially as a spice for human use. Cassia is just taken from trees that grow in forests. Its like comparing a well domesticated trained horse with a wild hose. And you try to ride them saying they are both horses.

I brought some Ceylon with me when I visited. But I'm afraid I'd have to say that for taste, I really don't think 10 times the price would be worth it. It's somewhat different, but when used in dishes with lots of ingredients anyway, it's impossible to notice. So unless you eat a lot of it, the 'imitation' stuff is understandably going to be the more popular option.
