      It’s ok my guy, chicks can act crazy as hell. My gf broke up with me a couple of weeks ago. What’s more important now is to distract yourself from your feelings- go outside, go for a run, take a walk through your favorite park. Make some new memories bro we’ve all been there

    I think I would try hollowing out the center a bit, fill it with the jam, then "glue" them together with a bit of icing around the edge, and pop them in the freezer to set. If they are frozen, they should be easier to dip and roll without the jam squishing out and since they are cold the icing coating should set up quicker and keep the shape rounder.
    Love seeing all the Scottish treats! Thanks for showing us the recipes.

      That sounds like a great idea. I also thought about cutting the bottoms off and having rough cake, that'll mean the jam won't slide away it'll absorb. If that makes sense?

    You could try thickening the jam with icing sugar or because the sponge is like scone mix make a dent with your fingers in the bottom to hold the jam in like a pocket, idk its just a suggestion

    Ok, so by the time this got to South Africa, we put the icing in the middle and then cover the outing in jam and then dip in coconut. Omg...the icing 😂😂😂 the dog is snoring so loudly 😂😂😂 love it!!! Gonna make this today!! Either way, this is gonna be a sticky mess 👍🏽👍🏽👍🏽👍🏽

    As a kid ‘jack the baker’ used to turn up in his van. Full of snowballs, tunnocks wafers and some bread. Never heard mention of snowballs since then. Happy days. Thanks Sue.

    yeah, i would do a dug-out. i do the same thing for sub sandwiches. you tear out some of the bread from the top of the bun, on the sliced side, so the mayonnaise and fixings stay in the sandwich, and don't just squish all out the sides.

    apparently you should use only a thin spread of jam - enough to act like a glue for the two halves to stick. its not so much a "filling" as just a glue base! i loved your recioie - tasted great - better than shop bought for sure!

    Spoon icing over the half domes then sprinkle the coconut over the icing. When dry add jam and stick together.

    Sue, not a criticism just a a recommendation, you might want to adjust your light. You and the background are fine but the foreground is really bright. Your white bowls, mixer, and flour and sugar are visible but are washed out because of the light. I can't see the rim of the bowl or what's in the bowl necessarily, it's just a bright white blob. Your container of flour is just a bright white rectangle with a pink label on it. It usually means the back light is too close or too bright.

    It wouldn't be authentic scottish, but I'd suggest making up some Choux pastry (the kind that is used for eclairs or profiteroles) and, as Sue mentioned partway, *injecting* the jam, bit like a jam donut. Everythijg else the same, but using choux pastry would give it a bit of structure and injecting will make it easier to add the amount of jam you prefer -- so the jam to pastry ratio isnt too dry.
    Edit: it would also be easier to make them a more manageable size. Could do anything from what was shown here to something bite sized -- just keep in mind that as you change the volume of the treat you will be changing how much coconut you are getting in a bite (coconut to pastry ratio)

    If you put a coin on the baking sheet under the paper, then put the dough ball on top of it, would that leave a small hollow on the bottom for the jam?
    I'm not much in the kitchen, so it's probably a bad idea. But sometimes bad ideas inspire good ideas.

Like yesterday I found that brand of old spice with charcoal scented or whatever. Shortly before that I happened to eat charcoal ice cream. And being that I am a moron, can you cook with it?
