    INGREDIENTS for the Berta Jay's
    Date Paste
    ---------------------------------------------------------
    1 cup pitted and pressed dates (I use medjool dates)
    ½ cup hot water
    OR
    2 cups dates
    1 cup hot water
    1. Pour the water over the dates and set aside for about 10-30 minutes.
    2. Then, pour the softened dates with the water into a blender.
    3. Blenderize for 1 minute or longer until completely smooth.
    4. That's it...
    5. Use as a sugar substitute.

    This is the best recipe on TH-cam for this, because the other recipes tell you to add too much water which dilutes the flavor, nutrients and sugar if you don't use all the water. This one adds just enough water so you retain the sugar, flavor and some of the nutrients. I just recommend soaking over night in room temp or hot water, instead of using boiling water if you don't want to lose more nutrients.

    Date paste is a great sugar substitute. I like to make a batch and place the paste in an ice cube tray and freeze it. After it's frozen, I remove the cubes from the tray and place the cubes in a plastic freezer bag. When I want to use the date paste, I remove the desired number of cubes from the freezer and either defrost in the microwave or let it sit on the counter to defrost.

    You are my date paste Berta...You are such a sweet lady. I will certainly try this as I have never heard of it before. Trying to lose a few pounds so using this instead of sugar might help with my sweet tooth. Thank you.

    Thank you for showing that you don't have to boil dates in water. I believe that kills or at least decreases their nutritional value. Just soak in warm water and I like to add a little coconut oil (optional) in the blender. It gives them an additional wonderful taste. You can order dates in bulk and really save a lot of money while adding a nutritional powerhouse to you diet.

    Hi Ms Berta! I'm running a bit behind, but wanted to thank you for demonstrating how easy it is to make date paste! Using the date paste as a sugar substitute, we've enjoyed making a new (to us) recipe of Date Cookies and Peanut Butter Cookies that we've been able also share with neighbors as well.     Hi !
    Just made this... love it... had it with almond butter on a brown rice cake! Can’t digest wheat or oats .. next time I make it I might add figs that aren’t too sweet, figs aren’t what they used to be in terms of sweetness. thank you!

      Berta Jay yes I have and have used them to marinate tofu . There is also a recipe for escarole using balsamic, garlic and coarse black pepper that is great hot or cold. ( I used to drink wine vinegar as a child and can still hear my mother yelling at me and saying it would , “ thin my blood.” 😊

I am not a fan of soy but have tried baked tofu bites...they were.pretry good. Oh, my Susan you drank vinegar as a child too?! My goodness. I knew there was something special about you🤭❤. Last question: what adjective or adjectives would you use to describe the Wild Groves vinegars you bought? I want to collect all the Troupers words and send them to the owner of Wild Groves.     Thanks again Berta for another wonderful tip! If I'm making muffins or something like that, how much date paste should I use in place of sugar (if recipe calls for 1 C sugar)? I can see how this would add wonderful flavor and moist texture to baking.

      I would use about 2/3 cup with the liquid ingredients. That should work. Taste the batter to be sure it is sweet enough for you; if not, add to your desired sweetness. Let me know if this helps you.❤️

    Until now my only experience with dates was the date nut bread my Mom used to make. And that was generally only at Christmas. But now??? Well, I just might have to get me some dates sometime soon! Because this looks delicious & very versatile. Also a question, Berta - when you use the date paste as a sugar substitute, do you use the same amount? IOW, if the recipe calls for 1/2 cup sugar, do you use a 1/2 cup of date paste?       Good question, Jane. I usually do the 1-for-1 but sometimes I have to add a little more date paste. So my answer would be to start at 1-for-1 and then increase to your taste. Does that help?❤️

    I’ve had a container of dates in my fridge with a little water and a little bourbon. Guess what in going to do with those dates today. Berta = the best.

    Hi Berta, I make a large batch of date paste and put it in silicone ice cube trays. Then it’s handy when needed in a recipe or I just want a small amount.

      @@bertajay yes it freezes great and doesn’t get frozen/hard. It stays just a bit soft. I use it like frozen bananas in a fruit compote. Once frozen I put it in ziplock bag. Give it a try 😊😁

      Berta Jay hey sorry Berta no children just me I lost my husband 8 years ago and we didn’t have children over the past few years I started giving up some foods and trying to eat less sugar and sweets so I been using raw honey and a pinch or very little maple syrup but I said I’m sure I can use dates it’s better for me so thank you so much. 😄🌻

      Yes, Favour, put it in a jar and then PUT THAT JAR IN THE REFRIGERATOR 😊. Keep it cold until you need to use it again...okay? 👍🏽

    May I ask you Berta Jay how to store this date paste..... should I store it in the fridge?? Can I freeze some??

      I have never frozen the date paste but I believe it would work just fine because I freeze dates all the time. I DO just store my date paste in the fridge in a jar with with a tight-fitting lid. Put it in the back of the fridge so it doesn't always get the warm air hitting it whenever the fridge door is opened. Okay? okay. 👍🏾 ❤️
