Quick & Easy Homemade Tomato Soup

- This delicious soup takes 10 minutes to make and is exponentially better than soup concentrate in a can from the grocery store. Using already on-hand Level 1 food storage ingredients is the key to a quick prep.
Note: Jim really liked the soup! Yay! He said "This is good tomato soup!" And he liked the onions as well. He ended up adding some cream, too.
Tomato Soup Base:
1 28-oz can tomato puree
2 cups or 1 can chicken broth
Add water to bring soup to your preferred consistency and mix together. Add in other seasonings as desired. Heat and enjoy.

When I make my tomato soup, I sauté onion and a little grated carrot. The carrot helps sweeten the tomato base a little.
grated carrot is a "secret ingredient" in MANY of my grandmas recipes :D

We use a lot of Campbell’s Tomato Soup. Our favorite way of fixing it is to add one can of diced tomatoes to one can of soup, and one soup can of half n half or cream. Add fresh basil, oregano, Italian seasoning to taste. This is very similar to Panera’s tomato soup.

I always add a teaspoon to a tablespoon of sugar to mellow out the tomatoes!! Yours looked so good!!!
I start mine the same way, butter and onions, then add the puree or even diced canned tomatoes and use the immersion blender to make it al smooth. Then I add V8 instead of broth. I love basil, so I use a lot! I season with salt, pepper and garlic, allow it to simmer 20 minutes, add a little sugar to offset the acidity, and then comes the heavy cream. Out of this world delish! This is good for a vegan (I’m not) who will probably omit the butter,and a high quality olive oil is good as well, but either way, still get lots of good nutrition. High in lycopene, COOKED tomatoes are great to help men avoid prostate cancer so always use canned or cook fresh ones if you are using them. I serve more gazpacho in the summer and tomato soup in the winter.

I believe you can water bath this and store it on the shelf, but don’t add the cream until you’re ready to eat.

I love this idea and will try it but I like blooming the herbs in the oil my mother always did this and said it adds to the flavor. Also I like the idea of using a good quality tomato juice instead of chicken broth for a change. The thing is with this recipe is it is versatile and you have to love that. Thanks Pam and Jim for another touchdown.
I hear you on hardly being able to keep up with the homemade chicken broth. We use a lot of it too. My husband won't even try my homemade tmatp soup - and I use garden tomatoes!
I make my tomato soup almost the same way. I simplify even more by adding dehydrated onion. Another quick soup I like to make is tomato pumpkin bisque by combining marinara sauce, chicken stock and a can of pureed pumpkin. The pumpkin works well as a cream replacement and is nourishing. Here in California, we are experiencing a milk shortage due to the 700+ herds of dairy cattle that are infected with avian flu, so it's good to have milk alternatives. My main milk alternatives are tiger nut milk (same macro nutrients as dairy mill) and cashew milk (can be made thick or thin, to make cream cheese, cream or milk).

Yum! I will try this with a smaller batch. I dehydrate vegetables so I always have what's needed for a spontaneous pot of soup or casserole. Buy vegetables when on sale and chop or shred then dry them and store them in plastic food bags and then in a jar with lid. Dried vegetables will store for many years.
We had a large family and ate Campbell’s tomato soup and grilled cheese sandwiches growing up. Always used a half can of water and a half can of milk. Yummy! Thank you for the great idea.

Do you ever have a concern that the acid of the tomatoes reacts with the cast iron? Acid foods are the one thing I always prepare in ceramic or stainless steel cookware. That looks delicious
The acidity of the tomatoes can break down the seasoning of the cast iron skillet * if * cooking for a long length of time thus leaving the food with a 'metallic' taste. Sautéed tomatoes would be fine as would tomatoe soup. Just remember to immediately remove the soup from the skillet and rinse/wash the pan well. Dry the skillet by placing on the hot burner so the water evaporates then very lightly wipe inside of skillet with butter or oil. I added this last part for those who might not know how to care for a cast iron skillet. ❤
She added the Gee first which helps protect the pan. Just re-season cast iron as needed but as a general rule we should limit acid foods in cast iron.

You could add to oinions a diced carrot to cut the acid in the tomatos.... and hand blender

I make it like that but i use beef bouillon. and I use basil. I blend it with a stick blender too. I add sour cream!

We have used V8 juice as a tomato soup for ease…it was Brian’s idea to use the small cans for lunches. You can add milk or cream, basil and whatever spices you desire. Adding a pat of butter instead of sugar gives it a richer flavor.

I found the tomato powder a little too sweet the first time I used it. Just be aware of that..

Your video brought back some happy memories for me. My late mother-in-law made tomato soup using a large can of tomato juice. She also used butter like you plus seasoned it with salt and pepper. At the end she added milk and about a teaspoon of baking soda. You had to stir it constantly when adding the soda. Sometimes she would add cornstarch to thicken it a little. It was very tasty, but I’m alone now so haven’t made it in many years.
We love minced garlic added to Progresso tomato basil soup, but I am definitely going to try your recipe with the addition of garlic!

This sounds great. I have frequently made tomato soup this way. Instead of purée u have whizzed up a can of whole tomatoes when I was out of purée and I always add a dollop (or pinch) of goat cheese for a little tang. I have also added a small can of diced tomatoes for a slightly thicker soup. You have taught me so well to start looking of ways to use what I have and utilize pantry staples. Many thanks.
I make this often. I have made it with homemade beef broth as well, and it gives it a richness and depth of flavor. If you want it to taste more like Campbell's, add a pinch of cloves or allspice and a tiny bit of sweetening (I use stevia). I only add basil, not the Italian herb blend. For me, it HAS to have cream!

I have tried small pinch of baking soda, helps to cut acid and prevents milk from curdling.

I use a can of organic tomato paste and 2-3 cans of water or broth, sometimes a dash of heavy cream.
Pinch of sugar and some basil, oregano or ital seasoning, depends on what I'm having with it.

When video started. I thought she was going to use Tomatoe paste. I have a question if you dont mind. After cooking onion a little bit , would you cook the tomatoe paste a little bit before adding stock? I do like cream in my soup. I would add some toward the end. I'm not much of a cook. But think I'm starting to get there.

Homemade tomato soup is definitely best! I also was raised on Campbell's, but they have added so much sugar now that you can't even taste tomato. Upside on that is if you are out of pancake syrup, you can always substitute the Campbell's tomato!!

I just put 5 cans of different tomatoes a bay leaf cook4-6 hrs in crock pot add 2 Tbl Butter 🧈
1 tablespoons white sugar when done add 3-4 cups heavy whipping cream yum yum butter sugar helps with acid

In summer, I roast tomatoes, onions and a head of garlic (top cut off & wrapped in foil). I run the roasted vegetables and garlic (squeezed out) in my blender and proceed. I will be adding some puréed tomatoes into my pantry. Your soup looks delicious.
Not that you cooked it for too long, I avoid using cast iron for deep high acidic dishes as that, it will overtime strip your seasoning out of the pot , can cause an offsetting taste and also cause them to rust just my experience 😊 godbless!

Looks so yummy, our family had this about a week ago. It was a perfect winter time meal. In Florida we don't have many winter days so it was on purpose meal to make on a cold day. Otherwise we have this even on our 90 degree days. Campbell's soup is what I usually buy however I've started cooking more items with that brand of tomato puree since you introduced it to us. Looks like I will try a new recipe again!
I like the idea of making my wn tomato soup a bit easier than starting from absolute scratch and cooking the tomatoes. Pam, would you consider showing your pantry of food? Lots of other YT creators do that regularly and it is great for showing storage methods.
I dont like crwam if tomato soup, but to each their own. I suggest that you add your dry seasoning with the onion. It help revive it and you'll get a better fresher flavor.
Same here. Tomatoes and cream or milk don't go well together in my mind. I like tomatoe soup, though. Add some orangejuice and a generous piece of butter to mellow out the acidity and it's fine.

@@trudyhoffmann6405 The tip comes from a Michelin star chef. Tomatoes and oranges really go well together. Just be careful with storebought juice which might be too sweet.

Easier still, use your favorite spaghetti sauce. Add milk, and a small pinch of sugar/sweetener to cut the acid. This makes a quick, inexpensive and simple soup with plenty of flavor.
Cooking for one, I always have tons of leftover sauce, whether I make it myself or open a jar of Raos. I freeze it in one cup portions. This will be a clever way to use it up as well as create a quick cup or two of soup! Thanks for sharing your tip.

I also grew up with cream of tomato soup from Campbell's. When mom was tired it was soup & sandwich night. We either had Campbell's Tomato or Campbell's condensed Chicken Noodle and Cheese or Tuna Salad Sandwich. I love tomato soup, thanks for your recipe. I would like to make a cautionary comment, tomato soup made in cast iron can absorb the taste of the iron as the tomato acid reacts with the iron in the pot. So....simmering it all day isn't a great idea nor is storing it in cast iron. My two cents.
My husband doesn't like Campbell's tomato soup either so this is coming at the right time. I'm glad that those CI pans have two handles on them. Old Arthur has moved in with my wrists and those pans sure have gotten HEAVY!! Pam, is it just me or is butter today different than it was years ago? What have they done to change it? Years ago, when I used browned butter, I didn't get all that "white stuff" floating on top. There might have been a smidge, but with today's butter, you go to melt it in a pan and it's nothing but white stuff floating on top that doesn't let you make good browned butter. It just doesn't seem to brown up the same as it used to years ago. Is that the milk solids you are talking about? P.S. My husband RAVED about your Garlic Shrimp with Orzo recipe. He wants that at least once a month now! You stated that recipe would be two meals for you and Jim. We finished the whole pan in one sitting. It WAS THAT GOOD!

Good day. Why would the ghee in our stores say it should be kept refrigerated if it is shelf stable? I would like to buy it, but I am thinking that perhaps they use a slightly different method, resulting in it not being shelf stable? Or is it simply to keep it in a solid state that they require it to be kept in the fridge?
Organic Valley says it doesn’t have to be refrigerated but I don’t know if it is where you are.
I cannot use canned soup on keto due to the sugar, but starting from scratch is worth the little extra time.
Campbell has gone off the deep end with using too much citric acid to their tomato soup. It now gives me heartburn every time I have it. Melting a hefty dose of butter or ghee in any tomato soup can be very rewarding too.
Add some zucchini or aubergine, it works like a sponge for the acidics

I've been looking for tomato soup to make - I've been trying to read labels - YES, I have always loved Campbell's tomato soup, but I've been noticing that even Campbells now has the words "contains bio-engineered ingredients". Can't tolerate the store bought brands....seems they use high fructose corn syrup to sweeten it. The ones I found using just sugar are still too sweet. When I was a kid I don't remember that soup being so sweet. ???
