Just a couple of suggestions. You should polyurethane the bottom of the butcher block too. The unsealed side will absorb the moisture from the air more and you may have some warping because of it. One coat should do it. Also when using apoxy you can use a flame to sweep over the top when it is wet. Don't touch it with the flame, just let the heat get close. This will pop the bubbles so they don't stay in when it hardens. Just a few tips I've learned when doing woodworking.
What about running a dehumidifier down there. Then perhaps putting a sensor in there to test for the moisture and only running it if it gets to a certain point?
Good observation and a potential problem. However, ventilation will help too. Worse case they put a vent on the opposite end of the opening on the upper end of the island. It would be much like a roof soffit or attic vent. Just following and suggesting a solution to your potential problem. 😊

My grandmother had a table just Like yours with draws. She kept her (Sunday napkins) in them. They were all lacey and very pretty. Later on there was bibs for the grandchildren. Just ideas to give you.

Did a structural engineer sign off on the joists for the island? Seems like there's no way that double joists on each side is enough to support the entire floor between the ends of the island. My intuition is the floor will sag without pillars underneath down to the basement floor.

Also, didn't see any stops for when it's open, and when it's closed?? I'm kinda thinking...sand down the new table and finish it as close to what the floating bar is. You can use a product called 'sanding sealer' that is alcohol based to apply prior to your finish. It prevents the grain from popping up. It works. I've used it for years in cabinet making.
I can just see some one years down the road confused because they can not find a way under the house lol This is a really unique way of soving a number of problems in a clean simple solution.

What mechanism / latch, do you have to engage and hold the counter top in place prior to opening it. I would also include a small hand grips to assist going down and up to your basement.
That’s pretty awesome, but, I would change something about how that door opens. The point is it being hidden. If someone is in your house (at any point) and they see those hinges it’s a dead giveaway. That bottom hinge is very not secret. Great job though.
I like the idea of this, think I would simplify this with a piano hinge on the end and gas struts to lift the stair side up. Like the small basement would work well as a tornado shelter for those of us in tornado alley.
Question why did you not have it open up in a upward motion using has shock openers instead of slides which will move if you push on while using the top.
I love these secret door ideas... next step would be to get an actuator and a secret switch or something if you wanted to take it to the next level. I think I would have tried a bit harder to hide the hardware... to make it super super secret... lol. Love it!!! I hope you keep this on your "to do" list and that you keep upgrading it over the years... but I'll understand if you don't.

Yes, those are cutlery drawers that used to come with tables. My grandparents 1930’s table had it.

The drawer in the table is a throw back design to an earlier time, silverware was stored in them.

Seen this idea done before on Fixer to Fabulous on HGTV not as a bunker but a closed space for the home owner.
In the little drawers on the table you could put paper and pens for games. Cards, card holders, dice, things like that would be handy.

if they did as you suggest, they would have to clear the counter top each time they need to go down below. Marty made the right choice.
