It IS exactly what should have gone there. I did something similar in our home kitchen because I really hated having to dig in a cupboard for the right pan.
Check the alignment between the blade and the edge of the baseplate on your circular saw. They are often out of parallel by ~1/8". That's enough to cause issues over the length of a cut. It will be a little fiddly, but you can correct the alignment by filing the edge of the baseplate to be perfectly parallel to the blade. Depending on the value of your time, another option would be to just go buy a track saw. I splurged on the Makita and it was the best money I ever spent on a tool. Worth every penny.
We also chose the "cheap", but we used Lowes to install and to be frank worth every penny, much like the drywall. We really do need to teach children the smarts of money. You have accomplished the same thing as the expensive counters and who knows you may buy siding with the savings (: Pots and pans look very fancy with the plumbing.

I don't understand the hurry. Work on something else while you are waiting for the countertops you really want. One main reason to build your house yourself is so you can take as much time as possible to get everything you want. I have had laminate counter tops and they are pure junk. We did epoxy countertops over MDF and they are beautiful and seamless and very durable. We don't have to worry about staining. We would highly recommend them. Your kitchen is looking fantastic 👌

You two are becoming quite the builders. Impressive. I have a future tip I learned from a plumber about the water lines under-the-sink. Normally, one would have a connector to make the turn, say like a dog-eared connector. And then one would cut new pex pipe, hook into the connector, and hook the pex pipe into the final fittings. At that point, the Plumber uses galvanized pipe (or rigid pipe), instead of pex pipe for more stability. I apologize if I am not clear enough. So let's say you ran the pipe from the wall, extending the pipe horizontally to the under-cabinet area (short piece of pipe). The plumber suggested using galvanized pipe at that area. He said having rigid pipe at those junctions is very important. My suggestion is not likely a common practice with plumbers installing pex. The suggestion is to recognize that although pex pipe is great and wonderful, but rigid piping at these junction points is still quite important. So many homeowners have complained about the piping noise in their homes becomes of lack of rigidity at these locations, including showers, etc.
Hope you don't have swelling problems at the seam. Was the ends of the particle board sealed with water resistant sealant/paint. If not keep water away. Unfortunately I suffered through inexperience.

My husband bought rough sawn white oak and maple in Northern Minnesota and when we built our 2 story barndominium in the end of our 40x80 shop we did boars and batton with galvanized steel like wainscoting he also built our cabinets the same way with galvanized steel insets in the doors...I love rustic and wanted it to look like it was there since the old west days since we moved to Wyoming in 2014 and are off grid and working toward self-sufficiency...with chick's if you gently pick them up by the head and they kick at you they are hens a rooster will just hang...Franando for the roost

the issue you are having with your Dewalt is that the bed plate is warped - a very common thing - the saw gets dropped once and it's warped . when you try to make long cuts you start out in one plane on the front of the bed plate and as the saw moves on the saw rocks and settles on the back of the bed plate causing the saw to bind - pros keep the back of the saw up just a touch so the saw is not rocking - try raising your blade all the way up and see if your rocks

The problem with the 1st saw you tried using is it’s been knocked and now has a tow in angle. Look carefully and the base plate can be adjusted.
