It's actually pretty hard to get 2 points in a row between close teams. That's why they usually trade points and it's actually pretty realistic, but also keeps it tense. I get that the flashbacks might seem annoying but they do actually tell some pretty good lessons and they also show how characters have grown or are growing.

You can see reaction channels all through TH-cam experience it where they ask "does anyone remember where we left off" as the flashback is going on. You can still like the show. But the changes in script, pacing where clear to see for all.
I love the way the show describes kageyama's growth even if they hadn't scored those points kageyama would still be the serene king his quiet trust and sets that push his teamates to be better is what gave him that title and what will make him a better setter for years to come win or lose
The way these guys can’t appreciate Atsumu’s brilliance or just can’t see it, it’s frustrating. And yes the monologues and flashbacks are important. If you just want to watch a match go watch real matches. Those moments which you hate are what makes haikyuu so likable in the first place.

Hinata is "mid" relative to everyone else in nationals. Which is to say, still way better than most people. But like, comparing him to other players on the team, Hinata's only reliability comes from his endurance and ability to pull off that minus tempo quick. All of his other feats tend to come out of nowhere. Like, he has the potential to make clutch receives, but would you place his ability to do so over Noya?
Appart from Kageyama and Nishinoya the rest of karasuno is mid. Hinata is not good compares the the other players in terms of fundamentals and skills he can't do much without the quick, he is a heavily luck based player for now that is.
Hinata is not skillful player but he’s not just a luck based player. After his decent recieve, even Jozenji’s coach said it’s not a fluke. At mock youth camp Hinata learns how to read a game and how to recieve.
Mid? Not really. All of the regulars are pretty good. It's just that you're comparing them to Kageyama, who's among the best players in the nation. Having a star player in the team doesn't make the rest of the team mid.
I would add Daichi and maybe Tanaka to that list, Asahi comes in close too, the other one that like Hinata has room for improvement in receiving and serving is Tsukki. I'd say all the regulars except those two are good, not on par with the geniuses but definitely not mid either.
Even with all the impressive feats of athleticism Hinata pulls off they make a point over and over that Hinata is not that great in general and for a decent amount of the show the only reason he's useful at all is because of Kageyama's super human setting ability, a less talented setter wouldn't be able to use Hinata for anything and Hinata is lacking in so many other areas that without Kageyama he would probably be on the bench. We as viewers see these hype moments with him and want to think of him as this great player, but he's a pretty sloppy player that just has an absurd amount of stamina and agility, in terms of technical ability he's still vastly outclassed by people like Ushiwaka and Hoshiumi, Asahi and Tanaka are actually better over all players than Hinata, but Hinata has been working on those fundamentals and his technical ability is much better than it used to be and he's on his way to becoming an actually talented well rounded player rather than just a monster of speed that needs someone else to do the technical part for him.

I mean one movie can be: spoilers Nekoma W (most of the movie) Then their loss vs the other short king they can speed up a bit (honestly I blew through that part in the manga... they only have like one cool player and it's the better Hinata clone) End on a cliffhanger timeskip Final movie can start with Hinata meeting up with Oikawa and playing beach volleyball with him. Then some more build up, then the final game.
