Hitting Ctrl in PC or command in Mac will allow you to select two columns that aren't next to each other. Highlight the first column, hold down Ctrl then highlight the second one. You will have to hit insert and the charts are in the center of the menu bar
For scatter plots, I have always learned that they don't have to start at 0. It depends on the data. For graphs like histograms, it is very important that the y-axis start at 0.
What if the x axis had values like 2.95 and 6.8 etc.. how can you show these specific values ( for example concentration of a certain compound) instead of showing normal scale (0-1-2-3-4- etc...)
That should be fine. If you have negative values in you data set, they would be in the middle. It depends on the context of the data which quadrants you need to see.

A professor of mine said to *always* start at index 0 to avoid misleading data visuals.

Typically, when there are decimals, you would still be able to do the same steps I did, and Excel will create a scale that best fits the data.
