  • These are the best cookies ever!! I love chocolate chip cookies but these are extra special because they've got oats, pecans, shredded coconut, and raisins. All these ingredients add flavor, chewiness, and extra moisture giving you a super gooey cookie!!

    Cowboy Cookies Recipe
    Ingredients:
    Butter (softened): 1 cup (226g) or 2 sticks
    Granulated Sugar: 1/2 cup (100g)
    Brown Sugar: 1 cup (200g)
    Eggs: 2
    Vanilla Extract: 2 teaspoons (10ml)
    All-Purpose Flour: 1 and 3/4 cups (220g)
    Baking Soda: 1 teaspoon
    Cinnamon: 1 teaspoon
    Salt: 1/2 teaspoon (if using unsalted butter)
    Rolled Oats: 2 cups (160g)
    Chocolate Chips: 2 cups (340g)
    Shredded Unsweetened Coconut: 1 and 1/2 cups (120g)
    Pecans (chopped): 1 and 1/2 cups (180g)
    Raisins (optional): 1 cup (optional)
    Directions:
    1. In a mixing bowl, combine softened butter, granulated sugar, and brown sugar. Cream together on medium speed until light and fluffy.
    2. Add eggs and vanilla extract to the butter-sugar mixture. Beat on medium speed until well mixed and fluffy. Scrape down the sides of the bowl as needed.
    3. In a separate bowl, whisk together all-purpose flour, baking soda, cinnamon, and salt (if using). Set aside. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Scrape down the sides of the bowl with a spatula as needed.
    4. Stir in rolled oats, chocolate chips, shredded unsweetened coconut, and chopped pecans until evenly distributed. Optionally, mix raisins into a portion of the dough.
    5. Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.
    6. Using a cookie scoop or spoon, portion out the dough onto the prepared baking sheet. Flatten the dough slightly with your hands if desired. For smaller cookies, bake for 10-12 minutes until golden brown and still gooey. For larger cookies, adjust the baking time accordingly.
    7. Once baked, let the cowboy cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. These are so yummy warm and fresh-baked but can also be enjoyed for up to 1 week after!
