TxDOT is actually now building a overpass at 2:10 And I got a good look at segment H construction, and TxDOT is building a stack interchange at SH-249.
I remember the first time being on Grand Parkway was the time of last year was my field trip I took from Westpark Tollway to Grand Parkway all the way to I-10 West.

To be fair the city has become so big and so congested that even the old bypasses (Beltway 8 and I-610) are just not enough anymore. It's insane to think that Houston needs a 180-mile-long bypass to satisfy everyone, and yet here we are. And it's not slowing down anytime soon.
The current northern terminus of 99 is close to where I live. And I'm already seeing the opening of Segment H just a short time from now. The folks living east of I-69 in New Caney will be VERY happy to have an alternative to the extra-narrow, extra-congested FM 1485 which has had a near monopoly on traffic going in that direction for decades.

The bypasses are getting so long and so far away from the actually city can we even take them as "bypasses" anymore?

You should do a drive on I-35 from the Oklahoma state line to Oklahoma City. It's a nice rural drive.
