The exp gain from finishing off the wounded enemies is likely from the Japanese warrior philosophy of 居合 ("iai," pronounced like "e-eye" in English). It's the concept of finishing a job to its completion. So if you set out to kill somebody, you make sure they're dead instead of just crawling around or writhing in pain. Interestingly, a lot of medieval armies did this kind of thing too even if there wasn't a word for it in every culture. After a battle, some soldiers would go around finishing off the wounded, often with spears, for various reasons. Sometimes it's mercy so they end their misery. Sometimes it's cruelty or to send a message or whatever.
It definitely helps to block-attack to stay safe, and be more “locked on” when you strike. You don’t need to make a swing by moving the mouse, you just look at them and “fire and forget”!
Hi Rosonant, let me add that you were able to mercy kill your own guys, and you used to gain xp by doing that but, this was recently fixed. The game is lovely it has a nice and beautiful art style, and you can have some of the most amazing moments, especially when you win a victory, you can do Kaishaku when you ask them to commit seppuku with actually extra xp gained by doing that correctly. This game is so sweet.

Finishing off enemies was done throughout the world, so gaining xp for it imo makes a lot of sense there, though that has been mentioned a lot in the comments already so here's one I haven't read in the comments yet: Headhunting. This is why you can cut off the heads of fallen soldiers (samurai and ashigaru alike I'd assume) and get xp from this as well - This again isn't something that was exclusive to Japan, but headhunting was an important aspect of medieval japanese wars. Bring the head of "famous" enemies back to your lord and you'd get rewarded for it. This is also kind of the origin as to why in a lot of fiction, we see these long introductions to some kind of warrior-esque person. Listening closely to their introduction and being able to recite it at the reward giving, you could probably squeeze out more money or lands by telling your lord how you've slain this very powerful person.
