For anyone lurking I had zero experience with fondant and very little with cake decorating in general, but my attempt at following this guide still turned out great. It seriously impressed my wife, family, and friends, (even if it wasn't quite as smooth and professional as the result in this video). A super late comment to tell you all that you can do it too!

Hiu Ying CHAN When sculpting I prefer modeling chocolate because you can smooth it out so much easier. Also, this cake ended up going to a party for the kids in my family and I think the modeling chocolate is tastier than gumpaste (although the kids did not want to cut the penguin!). You could certainly use gumpaste if you prefer :)

Yes! I agree, the cookies were much better than fondant (the first thing the kids ate when we served it!). I have the Ateco turn table, it's a nice cast iron base, it turns smoothly and doesn't slide around. I've had it for years and years and love it!

Юлия Белова I don't have my chocolate cake recipe up online... but you can use your favorite cake recipe (doesn't have to be chocolate) I had 4 cake layers- 2 8"x2"tall layers, a 7"x2"tall and a 5"x2"tall. Hope that helps you out!
Camille Arrivillaga Depending on your climate a cold cake will form condensation... in the summer, here in New England, I do get some moisture on the outside of the fondant. Just don't touch the surface and the moisture will evaporate on it's own and not leave any marks (as long as you don't touch it!), as the cake comes to room temp. I chill all of my cakes and nearly all are fondant covered!
Kate Pain 1200g-1300g should be plenty for the size cakes I used (depends on how thick you usually roll your fondant, I tend to go on the thinner side). I didn't weigh the fondant I used, so this is just a guess based on the amount recommended for an 8" and 6" layer cake: satinice.com/how-much-fondant

Kirsty Livestone I have my scratch vanilla cake recipe published on sugaredproductions.com. My chocolate cake recipe is the same, but I omit 1/2 Cup flour and substitute with 1/2 Cup of good quality cocoa powder. My ganache is just a 2:1 ratio, semi-sweet chocolate to heavy cream. I let it cool to about "peanut butter" consistency before using. Hope that helps!
