      @@andrewsld It was a dark and stormy night. Thunder crashed outside, shocking everybody inside our peaceful, quiet house with the sudden sound. It was hard having to endure the rain, but luckily me, my husband named Jerald who is 32 and has been married to me for 6 years and likes sports, baseball, and revolutionary art- actually, funny story! The way we met was amazing- see, when he was just a mere 24 years old and I was a bit on the older side of 25, we were both working at the same coffee shop. It was my first day on the job and he was showing me the ropes, but instead of focusing on the caramel macchiato, all I could focus on was the caramel of his gorgeous eyes. He was perfect- funny, kind, patient, and taller than a lumber tree in the middle of whatever season isn't lumberjack season. Skip ahead 6 months, and we're the best of friends. We have each other's numbers, we're laughing and hanging out constantly, and he makes me feel better about myself- see, funny story, when I was young I had severe self-esteem issues. I had been bullied quite badly when I was young as I was a little on the pudgy side, probably from eating all of my mother's delicious muffins, made from her original recipe, in fact, the recipe I'm going to share with you- after the story. So anyway, I was a bit on the pudgy side, and as you know kids are cruel and as a result, they would constantly tease me about my weight and intelligent personality- although I never saw any of that cruelty when I had one of Mom's famous muffins, the recipe I'm going to show you- after the story. Well, anyway, they always called me "Janice the Jogger" - it was an ironic name, you see, as because I was overweight they assumed I didn't jog. But anyway this did make me feel miserable for the remainder of my time in, and after school because of course kids are cruel and it really hurt me. It hurt my grades, my motivation, my everything- really the reason a 25-year-old was still working as a barista was because I was so unmotivated and convinced I was untalented! But my amazing husband managed to pull me out of that deep hole I had found myself stuck in. He constantly told me about how amazing I was, how sweet and understanding and intelligent I was, and how meeting me was the highlight of his day. Well, skip ahead another 6 months- it's been a full year with him in my life, and I can't imagine how on earth I ever survived without him. He has convinced me at this point to rejoin community college and I am taking classes to become a marine biologist, my passion in life, but more on that later. The point is, with both of us helping each other so much, all our friends are tearing their hair out asking why we're not dating! And one day, when working late, we realized it really was insane how we weren't and so out of the blue, he asked me if I'd like to date him, and I answered that I would. Of course, every year with him is a gift, but the next year really was something special in which we were living in our special sort of heaven. We weren't ready to get married, but once I found out I was pregnant with the first of our seven children( The children, in order, are Maria, Larry, Billy, Jace, John, Sarah and Steve the twins). After that, we realized we needed to take responsibility and married three months later, the wedding itself a beautiful dream of cake, dancing, tears, games, laughter and pure happiness. Well, raising Maria was hard, but once Billy came around we had really gotten the hang of this parenting thing, and although it was hard, we loved our kids very much and Jared went on to become an engineer while I worked at a Marine Biology firm. Oh, what was I talking about? Oh yes, well our son and third child, Billy, who was 8 at the time, ran up to me frantically explaining that his baseball team needed a treat for a picnic and that he had been so caught up in his studies, he completely forgot about it! (See, Billy, despite being 8 years old, was very involved in his studies. This in part may have had something to do with his dad, who had never fully understood school at his age and had gotten bullied severely for it, luckily being able to go through it with a smile because that was just the type of person he was, really the reason I married him- but his dad had learned every tip and trick in the book to make studying easier and upon realizing that Billy was also having trouble with school, had passed on his natural tendency to work hard and secrets to Billy!) So, of course, I couldn't resist pulling out the old baking cards that belonged to my dear old mother who had sadly passed on the third of June- it was a very sad occasion, her funeral held at the end of June on a rainy day, while people in black solemnly held their umbrellas as we gave our speeches on why we loved her so and how she helped us through life in her own unique way- See, my mom was a very vibrant woman, always so kind and quick to help others in need, even if she herself was in need. She was one of the most amazing people in my life, and it was sad to see her go, but I was thrilled that she left me her recipes- one of them being her fantastic home-baked muffins, my favourite recipe- see, when I was young, I already mentioned that her muffins were the reason that I was slightly overweight, but I never blamed her- they were AND STILL ARE beautiful tasting, like warm hugs in summer or a cup of cocoa in winter by a crackling fireplace- tasting like kind comfort. But anyway, after making my son promise to be more careful next time, I whip out the recipe cards and begin to bake her muffins for the first time in my life. The kitchen was a mess for the entire time, dry and wet ingredients alike decorating the walls while I rushed around in my apron, working so fast my kids thought I had super speed! My husband kept everybody out of the kitchen, although he later admitted to me that even he had been scared and put off by how intensely I was baking- not that I noticed! I was in a world of my own, mixing and whisking and working hard to make these the best muffins they can possibly be, for both my son and my mother! Skip ahead to two hours later, and you have the perfect muffins- fluffy, golden-brown tops, beautiful, slightly melted chocolate chips, and a gorgeous smell that could knock you out. The kids were BEGGING to have some, but I firmly told them that this was for Billy's game- even my husband wanted in on it, but he did not get any special treatment! But fast forward to tomorrow- after a long and restless night, the big game for Billy's team had come (See, unlike either of us, Billy was physically talented and being a baseball fanatic, Jerald suggested baseball, which Billy not only loved but also mastered, instantly.) The field was wet from yesterday's storm, yet the kids were too determined to play.
      The game was fierce! I didn't understand so unfortunately I couldn't tell what was happening, but I knew Billy was playing his heart out! After two hours of what seemed like the most vicious game I've ever seen, not that I've seen many, our Billy lost with only 1 point left. He was devastated, but luckily! I had still brought my muffins! Trying to cheer him up, I gave him one- and something magical happened. Suddenly, Billy's tears were replaced with a grin, and his misery was replaced by pure euphoric joy. "GUYS!" he screamed. "YOU'VE GOTTA TRY MY MOM'S MUFFINS, GO GO GO!" Instantly his team, still sad but intrigued by his obsessed tone, tried my muffins- and I watched as each of their expressions slowly changed to match my son's incredulous one. The other team was confused as to why we were so happy, but they didn't care. From an outsider's perspective, anybody would have thought we were the ones that won- and really, after trying it for myself, I can't say they would have been wrong.
      The muffins were perfect. It had been so long since I had one, and I would never dare hurt the dead, especially not my dear mother, but they were so much happier then I remembered them, but maybe that was because I was at a much happier point in my life! They were a soft, buttery joy, with a hint of almond and just oh-so-slightly crispy at the edges. The chocolate chips were ribbony smooth, and the entire delight practically melted in your mouth. They were, undoubtedly, the best thing I've ever had- and now I have decided to share this recipe with the rest of you, so you can all experience this joy that we did! First, add two cups of almond flour- NOT walnut flour, I almost made this mistake and trust me, it is NOT the same...
