Another great video. When I'm just cooking for myself I tend to follow the sales. One thing I really like about Harry's channel is that in addition to the fancy stuff he takes the time to test the bargains and isn't just cooking up $200 Wagyu Brisket in every video.

Harry, Do you have a preference or recommendation for or against using a rib rack for baby backs ? I know a rack can allow a person to fit more ribs on a rack, but what about the distribution and flow of heat and smoke around the ribs in a rack and the chance of losing some of the rub in that vertical position vs the traditional horizontal position with more space between racks? Lookin mighty tasty Coach. Isn't Walmart opening or has open their own meat processing plant out east? That may be a better indicator as to Walmart quality then Smithfield. Could be difficult (if not impossible) to find in Southern California though.
Great video as always, Harry. It's nice to see both discount sellers have excellent options. Pork ribs are my favorite bbq to make, but I've never trimmed the tips off before. I know they're not the most desirable part, but to me, they taste the best! I'll try trimming next time and cooking them separately. A great suggestion to go churrasco style with them as well - I love that! When I used to have a Brazillian restaurant near where I travelled for work in Worchester, MA, I used to eat there all of the time, but I haven't had one near me for a few years now. I'll just make it myself - thanks for suggesting that!

I think yes for Walmart Smithfields but am not sure about Aldi's ribs. My comment is buy what tastes good, is moist and tender, and has great appearance at a decent price.

Keep cooking in the pit. I use my oven for convenience. In a contest, we are not allowed to use gas or electricity so we cook the entire contest in our smokers and pits

My wife suprised me with several of Harry Soo rubs.. I did my own taste test with family members with what i normally use.. Brisket.. ribs and chicken.. all of harrys spices won.. so now i only use Harry Soo spices..
I feel baby backs are the way to go. Less trimming. The spare ribs have more meat but it looks like half the meat gets trimmed off. I’d end up throwing all the trimmed meat away.

That said and it would be difficult for anyone to probably do this but I would really like to know just how much better some of these heritage breeds taste compared to what is raised in the commercial pig farms. So quick add on. I just watched your Mangalista pork on patreon so you can understand my pleasant surprise that you did do a heritage pork cook. I'm curious what your thoughts are on the heritage breeds of hog available in the USA for raising table fare wise. I have heard great things about the kunekune flavor wise although they are a small hog originally from New Zealand. I doubt the Mangalista hog is available livestock or affordable but I'm curious what would be your next choice would be. Like I said above I'm seriously considering trying my hand at raising some livestock here ( heck I have 10 acres, plenty for some chickens, turkey, pigs) so let me know what you think.

Three brined chickens, three sets of ribs, same thing happened. I just got a KJ Classic Two, steaks I’ve done well, even a brisket or three. The probe and instant read temps kept telling me ten to fifteen below done, then I way overdid them. Like, seriously overdone. More like, a really inefficient cremation...
Harry, be great to compare a Wal-Mart brand of meat, or similar, (ribs, chops, steak, loin, etc; typically a Choice cut) to a butcher shop Prime cut. I once paid a lot of $$$ for a prime brisket to try it out. It was good but is it really worth it? Especially if feeding it to guests who don't know what quality of meat has been selected nor understand the BBQ process. Your opinion will be great but also have a regular Joe do a taste test, (ie, someone who cooks to live rather than live to cook!) I think all of us who subscribe here are NOT the regular Joe!
@@davo912Thanks Bill, never really looked for Prime at Wal-Mart, I'll check it out. However, I live in San Diego, CA. and there are 2 excellent butcher shops nearby. 1 is called Iowa Meet Farms, (in San Diego) the other is Birsher, (in Ramona). Both an easy drive and worth it. There are others but I find these 2 the best. They will cut what you want plus carry exotic meets!
Most commodity hogs in America are the Landrace breed so variability by package is up to you to select a good specimen. My test of 4 data points is anecdotal and not statistically valid! 😇😉😉
One thing you may have taken into account in comparison but did not mention in the results...... The Aldi spare ribs were not St.Louis cut, and very obvious once you trimmed them a much smaller(younger) animal. I think it’s worth noting that if someone doesn’t enjoy being a pro and butchering your own meat the way you do, then I think the Walmart ribs win by a mile. Lol
Both Aldi and Walmart sell pre-trimmed St. Louis ribs and my experience is that most store bought pre-trimmed St. Louis leave too much rib tip on them. I guess they can sell the St. Louis for more $ per lb than rib tips hence the tendency to leave between 1/2 to 3/4 inch of the rib tip on the St. Louis. Harry, I love your cooking. Always have. Just a comment on your selection of Brand of ribs. I also shop at Wally World, in fact, I worked for WM for about 13 years. My comment is not about WW as it is about the WW ribs you bought at WalMart. My store sells only Smithfield brand of ribs, so if you go to WalMart then you only have the Smithfield brand to select from. Smithfield is owned by China and I try not to buy China. I will never buy my ribs ,ever buy Smithfield ANYTHING. Keep your buying AMERICAN.

I leave as much meat on the second bone as the first one goes into the stock pot
Does adding mustard help change the color?
nope. just a schmear to create a tacky surface for the rub to stick
Have you tried the aldi salt and pepper briskets? I think they are pretty decent learning briskets.

Question so your doing 275 for 3 hours, spraying water every 30 minutes? It says to put in oven, what if i don't have a oven for a additional 2 hours? Thanks.
Keep cooking in the pit. I use my oven for convenience. In a contest, we are not allowed to use gas or electricity so we cook the entire contest in our smokers and pits

Think I will stop by Aldi tomorrow morning and pick up a rack of Baby Backs and give them a try. Hanging a Chicken in the WSM tomorrow and just as easy to throw in a rack of ribs.

Do you always use a rib rack? Why not just lay the rips flat on the grill?
I like rib racks when cooking ribs as I think the results are better than cooking flat on the rack

My wife suprised me with several of Harry Soo rubs.. I did my own taste test with family members with what i normally use.. Brisket.. ribs and chicken.. all of harrys spices won.. so now i only use Harry Soo spices..

I feel baby backs are the way to go. Less trimming. The spare ribs have more meat but it looks like half the meat gets trimmed off. I’d end up throwing all the trimmed meat away.
Rib tips are the real win. always cut your own.

Howdy Harry.🤠 I do like these comparison cooks. Especially doing both spare and baby backs together at a everyone kind of price. That said and it would be difficult for anyone to probably do this but I would really like to know just how much better some of these heritage breeds taste compared to what is raised in the commercial pig farms. So quick add on. I just watched your Mangalista pork on patreon so you can understand my pleasant surprise that you did do a heritage pork cook. I'm curious what your thoughts are on the heritage breeds of hog available in the USA for raising table fare wise. I have heard great things about the kunekune flavor wise although they are a small hog originally from New Zealand. I doubt the Mangalista hog is available livestock or affordable but I'm curious what would be your next choice would be. Like I said above I'm seriously considering trying my hand at raising some livestock here ( heck I have 10 acres, plenty for some chickens, turkey, pigs) so let me know what you think.

Three brined chickens, three sets of ribs, same thing happened. I just got a KJ Classic Two, steaks I’ve done well, even a brisket or three. The probe and instant read temps kept telling me ten to fifteen below done, then I way overdid them. Like, seriously overdone. More like, a really inefficient cremation...

Harry, be great to compare a Wal-Mart brand of meat, or similar, (ribs, chops, steak, loin, etc; typically a Choice cut) to a butcher shop Prime cut. I once paid a lot of $$$ for a prime brisket to try it out. It was good but is it really worth it? Especially if feeding it to guests who don't know what quality of meat has been selected nor understand the BBQ process. Your opinion will be great but also have a regular Joe do a taste test, (ie, someone who cooks to live rather than live to cook!) I think all of us who subscribe here are NOT the regular Joe!

@@davo912Thanks Bill, never really looked for Prime at Wal-Mart, I'll check it out. However, I live in San Diego, CA. and there are 2 excellent butcher shops nearby. 1 is called Iowa Meet Farms, (in San Diego) the other is Birsher, (in Ramona). Both an easy drive and worth it. There are others but I find these 2 the best. They will cut what you want plus carry exotic meets!

Most commodity hogs in America are the Landrace breed so variability by package is up to you to select a good specimen. My test of 4 data points is anecdotal and not statistically valid! 😇😉😉
One thing you may have taken into account in comparison but did not mention in the results...... The Aldi spare ribs were not St.Louis cut, and very obvious once you trimmed them a much smaller(younger) animal. I think it’s worth noting that if someone doesn’t enjoy being a pro and butchering your own meat the way you do, then I think the Walmart ribs win by a mile. Lol
Both Aldi and Walmart sell pre-trimmed St. Louis ribs and my experience is that most store bought pre-trimmed St. Louis leave too much rib tip on them. I guess they can sell the St. Louis for more $ per lb than rib tips hence the tendency to leave between 1/2 to 3/4 inch of the rib tip on the St. Louis. That's why for comps, I prefer to trim myself from a whole sparerib. Here's a few more rib videos where I go into great detail on the six steps to fabricate a St. Louis rib from a hog sparerib.

Harry, I love your cooking. Always have. Just a comment on your selection of Brand of ribs. I also shop at Wally World, in fact, I worked for WM for about 13 years. My comment is not about WW as it is about the WW ribs you bought at WalMart. My store sells only Smithfield brand of ribs, so if you go to WalMart then you only have the Smithfield brand to select from. Smithfield is owned by China and I try not to buy China. I will never buy my ribs ,ever buy Smithfield ANYTHING. Keep your buying AMERICAN.
Yes, I read about the big scandal that Smithfield is owned by the Chinese Communist Party indirectly via the holding company that bought Smithfields. Not sure how the US allowed that. I wonder if Aldi is the same?

Like all budget stores there are pros and cons. For example, I noticed that the selection at Aldi is much more limited than Walmart.
