      Cheers Greg! Happy Sunday. Yes Sam's has good meats so I use their meats for my classes in addition to RDepot and Costco. I especially like the certified Angus Choice at Sam's as it's good eating.

    Thanks to all of your good advice I smoked my 1st brisket and it was a complete success. Everyone raved about how good my brisket tasted.
    I smoked it then wrapped and finished it in the oven. Don't trust the oven controls, I used my wireless probes in the oven also.I had a lot of confidence in what I was doing due the number of your videos I watched.

    I just got my new smoker a couple weeks ago and I’m so happy to be spreading BBQ love. It’s so unique and everyone has their own flow and steez. Every time I see hate on a BBQ video I always say “don’t hate, load your plate and appreciate.”

    I buy from Costco so it's nice to see their brisket isn't bad. I retired 1 1/2 years ago and live in Connecticut. I'm looking to relocate in 12 months to save on taxes and spend more time outdoors. Got room for another Buddy ….. LOL. Great Job!

    It's worth noting different regions in the country have different beef suppliers...Both Sam's Club and Costco do not use just one supplier or single distribution center for the whole country. The meat you get can really just depend on what state you are in and the particular day you happen to be shopping. Either one could have a better offering on any given day.

    Harry, I have another idea for you. I would like a video on how to pick the woods and show what the different types look like (how to pick them). What type of woods to use for what type of cooks. I am very curious how the wood affects the cook/flavor etc. Also how to pick cords of wood (what to look for) etc

      Haha. I'm Hispanic just like that butcher, and we usually cook our brisket in a crock pot and shred it for burritos and tacos. So you usually don't want alot of fat since the crock pot retains alot of moisture anyway. So he was saying the leaner one was beautiful lol.

    I'm glad I'm not the only one who prefers to finish off the brisket in the oven. After poking the fire all night long, it's nice to be able to set it and forget it in the oven, that way I can get some sleep. lol

    The next challenge would be to compare two prime briskets - WSM vs. traditional offset. The airflow through the WSM is going to be a lot less (even with the lid propped open a bit) than the offset, cooking in traditional Texas fashion. It would be an interesting comparison! So if you're ever up for a trip to SW Missouri, we could arrange that test and a bonus BBQ crawl in Kansas City! :-D

      My HEB now stock Wagyu brisket on a regular basis as well as Wagyu chuck roast. The Wagyu chuck roast almost make me want to give up smoking brisket it's so good.

    You are the best Harry Soo. If I don't cook FPL or SRF I use Sams. The closet Cosco is 50 miles so it's Sams. I think Sams haS the better Briskets than Walmart because Sams usually has 20 to choose from where our local WM at best may have 4.

    This is a great video. I normally get my briskets from Costco but my last 2 were from Walmart (I tried to save a couple of bucks). I will try the post oak 'stick burner' method the next time with my WSM. Thanks Harry!

    Choice vs prime, as you said, the choice can rival the prime. Guess the cost difference should also be considered.

    The Sam's by my house almost always has prime grade. I would say that Costco generally has better meat but I think there's more Sam's Clubs than Costcos available for us more rural folk.

    The closest Costco to me is 2 hours away, but we do have a Sam's about 40 minutes away, so that's where I'm planning to get my first brisket. Good to see that I'll get an OK product there.

      Wrap when Maillard Reaction is complete. Else you will over smoke and dry out your meat.

    Great video Harry. Both looked amazing! I've used Sam's briskets before, Costco is about 25mi away so I'm rarely there. I usually get IBP Angus Choice from Kroger's. I'm looking forward to having some SRF Wagyu Black very soon though.

    I got a choice from Costco (only made 1 so far, no Costco near me) recently and they have prime now and it was better than 75% of the prime I ever got at sams

    Pro tip: get a vacuum sealer to store your portioned out leftovers. Keeps meet longer and take up much less space in the fridge....side note , So Beans is having sleepovers? lol, that dog has more fun than me and definitely eats better 🐕

    I've had nothing but great results with Costco prime. Last 5 years my WSM has been in the shed, seems crazy now the money spent on an offset could have bought a lot more brisket... if I had more talent. Thanks for the great video.

    Great comparison. You definitely have a more sensitive, technical pallet for the nuances in the meat. I appreciate your explanation of the sample size not being representative of the larger population and that makes total sense.     I'm a fan of Costco Prime briskets. Why go with choice when the Prime is like .20 cents more per pound? Right now though I'd eat either.

      costco business centers also have better prices than regular costcos, can use the same membership even. here in FL brisket or Halal Brisket is around $3/lb raw

      I totally forgot about Costco Business....we have one not too far from Chicago. I will have to check it out. I've been there just once.
      The prime brisket was not much more than choice?? I was just there yesterday and looked at the steaks. The prime was over $20 more than choice for the same cut and nearly the same weight. I meant to take a photo because I couldn't believe it.

      I have the same attitude. I had some great luck with the prime Sam's briskets this past summer. For a $0.30 difference (at the time) - easy upgrade.

    Walmart Select Brisket here in the Texas Hill Country was $2.28 a lb. yesterday. That's the most expensive brisket I've ever bought in the last 50 years. Up until the Pandemic started they were under $2 a lb. No I'm not looking to win a contest , I'm looking to eat good brisket and feed my family. When I first got married Briskets were 17 cents a lb. Lightly trim, Salt and Pepper rub, 12 hours or so in Box smoker. 250F . Cook till Tender about 195-200f. Wrap in Paper only if I'm in a hurry and running a bit late. If I'm going to spend 10 bucks a lb for meat We're going out to eat at J&J's or Smokey Moe's. The whole trick to good brisket is the Cook. If you move to Austin and open a BBQ joint in a trailer you'd have to fight Texans off with a stick even if you used Selects and served Lone Star beer. ;-)

    Without Mr. Beans..... I am not so sure it’s a valid judgment! 😉😀. One request- I noticed that the Costco was IBP and am guessing the Sam’s was Angus Choice from Excel (what I typically see at our Sam’s). Will you include the Meat Source (IBP, USDA Prime, Black Canyon Farms, GF Swift, Xcell, National Beef, Tyson Angus Beef, etc)? It would be interesting to see if one source typically produces/sells the better meat. THANKS FOR THE MUCH AWAITED TEST!!!! and going Post Oak Texas Style on WSM! I’ve done combo Post Oak and charcoal on 18.5” WSM- next will be all Post Oak log splits as Verified By Harry Soo that it can be done!😀👍.

      Devon Pucel I am nerdy,... I have an excel spreadsheet that I use each time I look at briskets at Sam’s, Costco, and Walmart. I look very closely at the cryovac packaging. Sometimes (mostly Costco) they have no supplier info- just USDA PRIME. noticed same sticker today on Sam’s Prime Brisket. I keep track of the prices, and just started rating them after I smoke one. Trying to find the better source. I will share it if someone is interested. Spreading BBQ LOVE as Harry does! He’s a Good Influence!!! 👍

    I buy brisket from Sam's..I don't have a Costco nearby. But I get prime from Sam's most of the time..I just make sure it has a lot of bend and normally the guys in the back are very good about letting me know the kill date on the box so I know how long to let it wet age in my fridge..I like it around 30days. Too bad it wasn't prime against prime..The subtle flavor difference could have been just the difference between prime and choice..I'm more interested in where you had your vents set at on the WSM 22 for the wood cook to keep around 275°..I would like to try that sometime..great video Harry!

      All top and bottom vents open on the WSM22 will do the job well.
      I find the grade is one indicator but cooking and eating is the best way to compare.

      Yes I do find them and not too often for stores in Los Angeles. Their certified Angus Choice is very good

      I can regularly find prime cuts of NY strip / ribeye at my Sam's that are the same price or $1/lb cheaper than similar choice cuts at my local grocer chain stores.
      Ironically, the closest 3 costco's near me don't carry any prime cuts of... anything.

      Agreed. My Sam's carrys alot of prime cuts. Whole ribeye roast, beef tenderloin and briskets

      I've had to call in advance and request briskets at my Sam's..... while Costco always has them.... disappointing that Sam's doesn't always have them in stock.

    Harry the difference between the two were close from what you showed choice and the prime but for backyard bbqin what would you choose thumbs up 👍

      With the price of beef today, I'd settle for the less expensive meat per pound and am neutral between Choice and Prime
