Mix well and cook until the tomatoes turn soft and mushy. 5. Add boiled eggs to the pan and coat them well with the masala. 6. Add water as required to adjust the consistency of the curry. Cover the pan and let it simmer for 10-15 minutes. 7. Garnish with chopped coriander leaves and serve hot with rice or roti. Enjoy your delicious dhaba style egg curry!😅❤

I make it slightly differently. I add methi dana (fenugreek seeds) first thing in the oil. The paste is fried onions which have been ground up in a blender. Add ginger garlic paste n fry/roast the masala with coriander powder, red chilly powder, turmeric powder and salt. No need for tomatoes or yoghurt. Garam masala powder is also optional. In brief, the main ingredients are: Fenugreek seeds, fried n pureed onions, ginger garlic paste, coriander powder, red chili powder n salt. Also, no need to saute the eggs in masala. Add them at last. Tastes the same.
