    Yakhni Pulao is a Kashmiri recipe made with rice, chicken and a melange of Indian spices that add flavor to it. This Chicken Yakhni Pulao recipe will help you make it easily at home. You can also make mutton yakhni pulao by using the same recipe and increasing spices a bit. While we do not claim that this recipe promises the ambrosial authentic Yakhni Pulao cooked in Kashmiri households, but we have tried our best to put together the Kashmiri recipe. It is scrumptious and satiating and serves as a perfect one pot meal.

    Ingredients of Yakhni Pulao
    1 kg soaked basmati rice
    2 cup(500ml) Oil
    2 1/2 cup onion sliced
    1 teaspoon cumin seeds
    8-10 cloves
    2 inches Cinnamon stick
    5-6 green cardamom
    3-4 1 bay leaves
    5-6 green chilies
    1 bunch mint and coriander leaves
    1 kg Chicken
    2 Tbsp coriander powder
    salt as required
    3/4 cup yoghurt (curd)
    1 tsp biryani masala powder
    4 cup Water(2 lt)
    coriander leaves
    Tips:
    - Don't forget to garnish your Yakhni pulao with freshly chopped coriander leaves or mint leaves.
    - You can also add a combination of dry fruits and raisins if you prefer a royal tasting Yakhni pulao.
    - You can also use mutton instead of chicken. Just level up the spices a little as per your taste.
