- Slow Cooked Lamb Shanks in Tomato & Red Wine Sauce | Instant Pot Recipes
Ingredients (Serves 8)
4-6 lamb shanks, depending on the size
salt & fresh cracked black pepper, to taste
2 tbsp olive oil
3 tbsp unsalted butter, divided into 2 tbsp & 1 tbsp
1 large onion, finely diced
3 large carrots, cut into 1/4" round slices
3 celery stalks, minced
8 cloves fresh garlic, minced
1 tsp paprika
2 tbsp tomato paste
2 cups red wine
1/2 cup chicken/beef stock
800ml crushed tomatoes (canned)
1/2 cup - 1 cup fresh basil leaves
1 tbsp sugar
1 tbsp chopped fresh/dried rosemary
1 tbsp chopped fresh thyme (or Italian Seasoning)
2-3 pcs dried red chilli, seeds removed, optional
2 Bay Leaves
cornstarch slurry
*Beef broth may be substituted with chicken stock or you may use a mixture of both chicken and beef stock
You may use any pressure cooker. However, for the Instant Pot, the timing I find most reliable to make the lamb fall-off-the-bone soft is 40 MINUTES pressure cooking in high pressure. This is then followed by 20mins natural pressure release (NPR) before a quick manual release.

Hi Winchell, would like to ask if it is possible to prep this recipe using a slow cooker crockpot ?
Yes, this should be possible using the crockpot also! :) some adjustments may be needed though, in terms of cooking time. :)
