Having grown up eating catfish I caught, some muddiness never bothered me, but I’ve never noticed it in farmed domestic catfish. We bake it with olive oil, salt, pepper, and lemon thyme. 400 degrees until firm, usually 8-10 minutes.
Precook onions and garlic with a bit of baking soda and they will virtually disappear in the dish. Love these Q and A sessions. Learn so much from them.
I love new recipes for beets. Thanks Lan. Please keep in mind there are many different options to cooking. Everyone prefers options. That's the fun in eating.
I like your explanation, I agree that herbs are depend on dish, some dishes needs more herbs and some are needs less. I am glad that I listen your explanation. Thanks
Beets: in our city we have a neighborhood with a large Russian population. Several of the markets that cater to that neighborhood make various fresh salads. One beautiful salad of chopped beets with walnuts in oil is so yummy! They also do one with beets & dill in mayo. Oh! And don't forget the beet greens! Wash throughly, and cook like spinach or, use raw in salads or smoothies (yummy with blueberries).
I like how patiently you answer questions and your knowledge. I only liked fried eggs as a kid but loved scrambled eggs later, so there is always hope. ♥️ IF you want to puree something to change the texture, not the vegetable as such, puree when it is already cooked and has combined with the other flavours. That way you will not intensify the flavour as you would when pureing them raw. Good egg-free coatings are pakora batter or beer batter.
Love my Breville. Use it all the time. For blending the veggies I use ATK’s beef burgundy method and put all the veggies in a cheesecloth sack. Then when it’s time I put all it part of them in the blender.
My caucasian mom was raised in Tachekawa Japan on the mission field. She keeps her special set of chopsticks in her purse, for use anywhere, any time. She is 82, and can pick up a single grain of rice, hard or cooked, to this day.
I grew up with what my mama called Harvard beets - drain the liquid from jarred sliced beets and add equal parts apple cider vinegar and sugar. Heat to a boil and add cornstarch slurry. Add beets and stir; turn off heat, add knob of butter and cover until ready to serve. As an adult, I backed off on the sugar to about 3/4s of the amount of vinegar (and frequently use a sugar substitute) and have frequently substituted fancy or flavored vinegars. We eat this once a week in the colder months.
For Garlic - Microwave the garlic for about 35 seconds(in a cup) and then it will smash to a paste under the side of a Knife and disappear into your dish. For Breading - use Buttermilk or Yogurt thinned with milk or A warm (not hot or cold) thinned white sauce
Big fan of Breville anything....if it is needed. Garlic depends on the use some long braising slicing or some saute....hey but miss Lam!!! Always a plus when she was on Camera!! Thanks to you both!!
I cannot take cilantro - it tastes much like Lestoil floor cleaner to me and there are LOTS of people who cannot eat the stuff - correctly cooked is not always the answer. However I am Polish - and nothing can beat(for me) the fragrance of Onions cooking in butter very slowly just until they are just translucent. A little over a Pierogi (I make more than a dozen fillings) is home. Of course, being polish, a nice pot of Kapusta (Polish sauerkraut) on the stove is home too!

Catfish. The lake taste lingers if it's not been bled thoroughly. Soak it in water 20 minutes minimum. Rinse. Soak it again. And again until the water is clear.
For tne catfish, if you've caught it yourself, let it live in a large pool/tub of clean water for several days. I would need to see actual data of proof that the test is a fraud - compared to actual in the world data of real people to make a decision that it is a fraud, it appears that if it was a fraud, it appears to be working quite well in the state that I live, the US military in general, as well as MOST places around the world. I would not trust you without that CLINICAL proof. It IS clear that using Masks reduces the spread of the Disease and in areas where they are mandated there are FEWER cases and Fewer deaths. In Both NY and NJ, wearing Masks, social distancing, and Testing combined to greatly reduce the number of cases and deaths. I would need opposing data showing that the tests did not identify people who had covid (Many of which needed Hospitalization proving them correct) and Infection rates stayed the same or went up when using masks.Your statement that they don't work is proven wrong in real life. Sorry - I do not believe you at all. I recently was in a ward where the people were complaining that they were dying of a HOAX and how can that happen (Hint - COVID was never a hoax - it is a real Disease that has been "caught" by over a million Americans so far)
Either way - the COVID infection is real - that is proven around the world. THere is nothing you can do to argue against that being true. THERE is no INTERNATIONAL court that has jurisdiction here - wo your statement about bringing suit is simply NOT TRUE. WHy have they not brought suit in the USA? Here, they would actually need PROOF of their statements which they do not have. THe world has shown that non-contact and Masks are the way to reduce the spread of the infection and if you were a true American (WHich you are not ) - you would comply until a Reputable AMERICAN source of information said otherwise, and NONE has.
