If Dooku was killed on Geonosis the Republic would win the war earlier with Dooku dead the Separatist Council would surrender ending the war. The Republic would then hunt down and arrest the leaders of the corporations on the Separatist Council and seize their businesses and Order to pay off their war debts
As far as who would win in a a battle between Grievous and Vader, it’s a tough choice. It really depends on which version you use as the abilities that they both have are very different in Legends and Cannon, but regardless of that I would have to say it would be a pretty tough fight regardless as Grievous had been trained to fight against Jedi while Vader has the force powers to fight him. The fight will either at best end up as a stalemate between the two of them or at worst a Pyrrhic victory for the winner. I’m not saying that Vader or Grievous would win for certain, just that it will be a very tough fight.
Vader would kill Grievous. If the CIS council weren't on Mustafar, there would be no duel on Mustafar, and Anakin wouldn't have been injured. With his body still fully intact, he would be the speed and strength needed to actually engage in the duel, and with the ability to tap into his anger and the dark side, he wouldn't even bother with a lightsaber. He would just use the force to rip Grievous apart like a bug.
