The city's name in Greek is and always has been Θεσσαλονίκη (transliterated as Thessalonikē or Thessaloniki), since the 4th Century BC. Thessalonica is the city's name in Latin. Greece was part of the Roman Empire for a long time and the city was referred to as Thessalonica when speaking in Latin. The name never changed, it's just the city's name in two different languages.
The Bible itself calls the city Θεσσαλονίκη/Thessaloniki (Acts 17:01, 17:11, 17:13; Philippians 4:16; 2 Timothy 4:10). The New Testament was written in Greek, therefore uses the city's Greek name. English translations of the Bible call it by its Latin name Thessalonica.

The author of Luke-Acts invented bits for his gospel, melding the earlier gospels of Mark and Matthew into the story he wanted to tell. Then he invented stories in Acts to demonize the Jews (exonerating the Romans in the process) and tried to portray Paul and Peter as friendly (even though Paul himself wrote than the two did not get along).
