Never thought to put it in the freezer. I was using my sharpest knife and the meat is so tender it kind of just fell apart just from the applied force.. much easier to get beautiful, straight cuts after it's been in the freezer for 15 minutes. Thanks for the fantastic tip!
I made this tonight, It came out wonderful. You are right about the extra sauce, my family was using sourdough bread to sop-up the remain sauce off their plates. Five stars!!!!!
yes ahi is safe to eat if you handle it correctly.. by keeping it fresh cold til time to prepare. ahi is also used for sashimi, sushi,hawaiian po-ke, etc.. ONE WORD!! DELICIOUS!!!

I'm no expert but I do know that most ahi tuna steaks are eaten raw or partially raw especially if it's "sashimi" grade tuna. Do so at your own risk though so if you're not comfortable than don't eat it just yet. I actually just started eating sushi and other raw fish just recently myself!
Sushi grade doesn't mean anything. If you buy fish from a market, caught by commercial fishing boats, they've been fishing for 18-20 days before they get back into port. The fish is kept on ice. Sushi chef's buy from markets and don't freeze the fish. Just out of curiosity, what do you believe sushi grade to mean?
Jerry Shanahan they actualy do freeze the fish in order to kill any bacteria. That is what sushi grade means, but its not regulated, anyone can call it sushi grade.

It's not cold after 15 minutes. Putting it in the freezer stops it from cooking and it makes it easier to slice the tuna.
