Probably because Fly is cheaper and does more damage. As for coverage, Incinerate is already very strong and Flame Charge is only good against steel-type. But since you’ll probably want to cover electric, you already run a ground-type pokemon anyway.
Flame charge gives talon more fast move farm down potential but also demands talon be a bit of a shield hog and not swap. Fly is less energy, higher damage, allows for more flexibility in play, and actually allows you to store both a fly and a brave bird at 100 energy. That last one may sound not so significant, but imagine a situation where you leave a matchup with 100 energy and your opponent is on their last mon with one shield. If you have fly, you can potentially bait and throw a nuke brave bird immediately after. With flame charge, regardless of if you bait, you’d need a whole other incinerate to throw a brave bird. Flame charge is just a bit of a redundancy because the only types you gain coverage against over fly are steel and electric types, both of which are very rare (or are very fragile in cases like morpeko). Meanwhile, you lose a lot of pressure against water, dragon, and other fire types.

I’m starting to dislike Gastrodon tbh. It’s just such an alignment dependent Pokémon and feels so weak against anything that can resist Mud Slap. And Body Slam just feels so weak now it’s sad.

I really like Flame Charge on Talonflame because the boosted Incinerate damage is awesome.

It didn't get dropped instantly imo. Once creators started to run the double flying moveset, it branched out slowly from there.
Idk, I started playing pvp in 2024 and every talon flame I went against was running flamecharge + brave bird
