Thanks for the question. I get the following issues: (I primarily use the Swiss method with a pinch of Cream of Tartar added. I have a mini kitchen aid mixer and mix on low for about 1 minute then high for 8-9 minutes to get stiff peaks... then I macaronage - let them rest until no longer wet then place in my oven. I set it to 290 because it runs hot. My internal oven thermometer reads 300. I bake for 20 or 21 minutes. I get really nice feet -- and very seldom get volcanos...but, 1. Sometimes my outer shells are fragile... 2. Sometimes the bottom sticks to the mat -- even after allowing to cool for upwards of 1 hour... I keep troubleshooting... just don't know what I'm doing wrong. Either way -- my husband and I enjoy my test macarons! :)
I think my issue is that I seem to have hard time to make the batter to combine before doing the macaronage. My batter is either too thick or too runny☹️
