  • HOW TO MAKE PERFECT MACARONS WITH HAND-MIXER NO HOLLOWS // Learn how to make macarons with a hand mixer and have no hollows. Making macarons with a hand-mixer definitely takes longer but I wanted you to see you can still achieve stiff peaks with your meringue. We will use the french method and I will give you macaron tips on how to get full shells. Follow along with Amy from the Macaron Academy.

    Do you use a hand mixer to make your meringue? How long do you normally whisk before stopping?

      Hi yes. I was using a hand mixer too. And thanks for this video! I finally get to know how stiff a stiff peak should be. Lol. My batter is always runny😅 thought that the mixing time from the hand mixer is just a minute or two different from the stand mixer😂 soo yeahh.. Thank you so much!!!

    Ah so great that you also share the timing when whisking Amy, love it, because I was wondering when should be a good time to add sugar, this helps a lot. Thanks for all the details, love that this video you show the oven, at least it helps me that I won’t have to doubt which rack should I bake my macarons.       @@MacaronAcademy as I had experienced so many hollows 😂 I questioned everything , I did even changed it to top rack and bottom to try. I just shared your video with my friend, so hopefully it will help her to see how you draw 2 figures 8.

    I'm going to attempt macarons. When I make chiffon cake I use a hand held mix, the whisk attachment on high with 7 egg whites (cream of tartar, no sugar) and it only takes about 5, maybe 7 minutes to get stiff peaks. Can hold the bowl upside down. I like the hand held mixer because it's easy to pull up a bit on the mixer and see how the peaks are forming as you are mixing.

    I think I've been undermixing my meringue! I always end up with hollows and sometimes cracks. I will update on how mine turns out. Thank you!

    Oh idm the time hun I used to use a whisk and my arm would just give up on me the day after. Also the time it used to take over 2 hours just to get it stiff

    Excellent video! Just what I needed. What size baking sheet works with the downloadable template?

      Thank you so much! I found that paper sizes and baking sheets are seldom the same size. For my baking sheets, I printed off 2 templates and cut the 2nd sheet into rows. I taped the rows to the first sheet to the top and bottom of the 1st sheet to fit my baking sheets. Before cutting, I would place the template into the size of baking sheet you prefer, then cut based on those measurements. Hope that makes sense. 😊.

      @@MacaronAcademy Makes perfect sense (I think). I'll give it a go. I've been watching the British Baking Show, and am slowly working myself up to the challenge of making Macarons... which I love. But I don't really want to invest in a bunch of stuff (yet) until I'm sure it's something I'll enjoy doing. So... 3-power hand mixer and plastic bag for piping... fingers crossed.

      You can do it!! If it doesn’t turn out the first time, keep trying. Make observations and take notes at every step. This will help you trouble shoot if they don’t turn out. 😀
