You can get knives ridiculously sharp with just that. It's the skill that matters. Invest in your skills. With one 400 small diamond plate (Temu fof 5 bucks) a skilled person will make a knife incredibly sharp.
Nice demonstration but you state that mono-crystalline coating is the best when in actual fact poly-crystalline is far superior especially for sharpening. Also when you said that poly-crystalline diamond will wear down and become useless, again this is false as they are tougher and will wear considerably better than mono-crystalline diamond finishes.
