    O. M. G. Now I am REALLY hungry! Great vegan idea! And with summer sweet corn it would taste dee-vine! My Jewish husband, who does most of our cooking, was sitting and laughing at me as I began to make "yum" noises! My Mom never made this but the mix of corn and hard boiled eggs are used in chicken soup, so I know this would taste great. We can try it if our vegan daughter comes home in the summer when we can get fresh corn. Thanks for showing us how to make this.

My grandma's corn pie usually held together, but I'm pretty sure she poured a couple of beaten eggs into it rather than putting hard boiled eggs on top. The eggs acted as a binder. She also always put parsley in hers, but then, she put parsley in everything. She didn't usually put potatoes in hers either.

yeah... I don't know why he didn't put a binder in there.... Dudes!!

Yeah, I expected him to add some beaten eggs too.

My mom used to line the bottom with either corn flakes or Ritz Crackers.

There are other recipes out there, mine isn't the only one. Some people add bacon, oysters, or clams to their corn pies for a protein.

Could you mash the potatoes then fold in the corn to make it stick together, and to your ribs? Or would that be a different animal?

We would make a similar pie, but it would also have onion and apple in it. We don't use hard boiled egg. We beat up some eggs, and mix the other ingredients together with them, and the egg holds them together after baking.

I'm a vegetarian of PA German descent and while this is something my grandma didn't make (so I've never had it), it looks great! If you wanted to make it vegan (although a touch less authentic), you could easily substitute vegan "butter" and non-dairy milk and maybe put in slivers of fried tofu instead of the eggs. You're also making me wonder whether I could bake my grandma's corn casserole into a pie crust. . .

I like what you did here, I’m not PA Dutch but through face book I was accepted as a member and I love it, a lot of different types of food that I’ve never heard of and last night a nice lady was showing off corn pie. So I found another recipe first before yours but I think yours is much better. You parboiled your potatoes and that’s smart, you use fresh corn and I love that and you used a egg slicer which again I think this is smart. I love the way your pie crust came out, is there a recipe on that because yours looked absolutely perfect. The bottom of this pie looked a little juicy and the other recipe I watched was really juicy, would you ever use a thickener? The bottom of your crust may not cook with the liquid? I know this old recipe came about with some having a lot of corn coming in, it’s a hot filling dish but you better be working on the farm all day or your going to weigh a ton. Thank you so much, loved what you did.

My family would have this every summer! We wouldn't add potatoes, just corn, eggs, milk. Always had a sauce pan of simmering milk with pepper on the side. I never ate the eggs, but it doesn't taste right without them inside.

Eggs make it non-vegan too, but who's counting? Seems good, maybe diced ham or sausage would be good in there too if you wanted meat. I don't generally eat much meat...
