Caught 2 big ones a while back and ate them fresh with a cornflour and lemonade batter, just added a touch of turmeric. Was pretty good. Agree with your verdict.
Great stuff, mate. Love spearing and eating Aussie salmon. I'll usually grab 2x at a time and do one sashimi and smoke the other one. Next one I get will definitely be going into a frying pan with a flour dusting though with some chips and brown vinegar!
Ah mate! Aussie Salmon aren't a trash fish! Is funny people's perceptions of them, and I think the taste may vary between regions. Love them as sashimi on day caught (good to see you having a crack at it) and go alright in a pokebowl too. Reckon they keep longer than you give them credit for too. For breaky I ate my last fillet from one I caught Sunday (writing on a Thursday evening). Simple pan fry with taco spice, capers, and eggs! Cool vid mate, and love the concept of chasing the undesirables!

Last time I shot one of these I was in an Airbnb and all they had was a Weber. So I just tin foil baked it whole with dill, lemon and butter inside the gut cavity and it was amazing. You do need to bleed them though, like you say, and we ate it about 3 hours after it came out of the water. Best way to way to eat them aside from smoking I reckon.

Ah good to see you got around to the Salmon, a good eating fish that is pretty much the best example of why it's so important to treat a fish or (any game) properly after capture. Unfortunately salmon will probably always have a bad rep to the lazy Fisherman though because of exactly that, they are lazy 😂, us that know how to treat produce know which fish are good, and the salmon is pretty good haha. Great video mate! Never understood the hate the Aus salmon gets, I think you explained it well with it deteriorating quickly though. Seems alot of "bad fish" is probably cause by the poor treatment after the fish is landed.
Yep couldn’t agree with you more. Bleeding the fish instantly and shaking it out will dramatically reduce the amount of blood inside the fish. Some fish bleed better than others though
Eaten myriads of these, easiest way is bleed them straight away, then fillet and skin them, and cut out the red meat and then cut into fish cocktails batter and deep fry them. No strong taste at all. Enjoy your videos

Haha ohh no the old gritty fish. Yeah its super yum and there are soo many ways to cook it but I definitely recommend the smoking
