That said, yes, a LOT of foods are safe to eat past the expiry date, so the cheese being moldy means it isn't just some "reused cheese" that the company got for being past the expiry date (unknown to many, markets throw a LOT of perfectly fine food everyday into the trash everyday because expired food is illegal to sell, so some countries redistribute evaluated foods that were deemed safe to poorer communities), but its actually even OLDER cheese, maybe years old, or merely VERY badly handled (food factories are actually really clean, despite the fame), as in, human contact should be MINIMAL. Clearly, this should NOT happen before expiry date!
To add, the only things heavily regulated on use by dates are baby related. Everything else is a suggested 'use by' or a 'sell by' date for the store and is still safe to consume after just not to sell
It's happening due to a failure in the sealing of the packages. If the packages were sealed correctly it would be literally impossible for mould to grow inside no matter how old the cheese is, because mould requires oxygen to grow. So either they sealed cheese inside those packages that was ALREADY mouldy or they aren't sealed correctly, which allows oxygen into the compartment with the cheese and allows mould to start growing. I think if the cheese went in and was already mouldy, there would be a lot more examples of people getting the mouldy cheese than there are. It almost certainly went mouldy AFTER it was packaged due to the seal not being done properly - and if you look at pictures of the packages that contained mould you can often see that there is in fact glue missing from the seal that would allow oxygen to leak in.

If lunchly was made/packaged in a hot/warm and/or humid climate, combined with the faulty seal made it mold way faster than it should have.
Folks pasteurized cheese is not “fake” it goes through heating too preserve it longer, so you don’t end up with moldy ahh cheese like this. Is real cheese better for you? Yes. Do you live nearby a market, or produce your own cheese? If so get real cheese, if not you gotta deal with eating “fake cheese” pasteurized cheese if not bad for you but is does have a lot less nutritional benefits than real cheese.
Fake cheese (cheese food) does exist and it's different than pasteurized cheese. American cheese isn't really cheese and it's made mostly of solidified vegetable oil. They usually add some milk into it so it has calcium, but it's not made of milk curds like actual cheese.
Non pasteurized cheese doesn’t go bad like pasteurized does, same thing with raw milk, it doesn’t go bad, just turns to yogurt, unlike pasteurized milk.
I don't wanna imagine the sicknesses you get from eating the mold. Lunchables add chemicals to make the cheese preserveable, we do that in Europe too, because cheese is a dairy product after all, it goes bad quick if you dont do that. (thats why you cover a cheese wheel with wax too)

Rancid take: I actually really liked Feastables' recipe. It was my favorite candy bar ever. It was literally the only candy, chocolate or otherwise, I've ever bought in the past 10 years. It was the only candy I would actively seek out when I went to Walmart. When they switched the formula, it broke my heart. I even wrote to them to see if I could buy whatever was left of their old formula bars. But they never returned my letter. Now I'm back to not buying any candy for until who knows how long. If anyone knows of any chocolate that tasted like the 1st Feastables iteration, especially the Dark Chocolate (Quinoa) version, please let me know :(

Mold can only grow on its surface if there are any organic materials, plastic itself cannot mold unless its tainted. I guess there was leftover organics that grew the mold. Seems to be a massive hygene issue in production of this food
