What counts as an ingredient and what doesn't is hard pinpoint, as many people wouldn't call water for cooking or things like salt and neutral oil an ingredient either. I understand her to mean that this dish with its variety in flavours and textures is based only on these three base ingredients and made more complex by processing them in different ways.
If you think that's $2 of ingredients I got bad news for you. Looking past that, turning $20 of quality ingredients into a dish someone would pay $200 for is quite literally their job. That's like looking at a $10k painting and saying "pfft, it's like $100 worth of paint 🙄"
I actually agree with your statement here. But the art of it is still fascinating....to a degree. If everyone did this it would become a more cost competitive field, and likely not as special.
Based on your handle, I’m going to assume your concept of nourishment involves strictly raw fruit and vegetables. Btw a strictly plant based diet for an omnivorous animal is not nourishment. It’s actually pretty unhealthy if you aren’t also consuming vitamins, fiber supplements, and calcium supplements to make up for what you’re not getting in everyday meals. We evolved to eat more than just plants and tubers for a reason.
