i am concerned about the gelatin, when you cook it too high, it kind of dies, in class i was told to add it when the temperature is lower than 70 degrees celsius and you are finishing the cooking process...can you tell me something about it?
For all the vegans out there, you can also use, "Vegan Gelatin", it is a gelatin mix from plants only. Though Gemma is right, Agar Agar works perfectly in this recipe.

I love marshmallows. I always have them in my pantry in all different sizes and flavors. Question, Can you add different flavoring and food color to make them taste different. I would love to make pumpkin spice ones and then maybe peppermint for around Christmas. If so what kind of food coloring would be ok to use?

You add flavors and colors at the end of the mixing time, just before you shape it. experiment, and use extracts :)
