I lived in California for many years and there are as many variations of this sandwich as there are restaurants making it. As long as it's a combination of fresh veggies and something creamy, do what you want.
The amount of love for Carla and her recipes is unmatched. Being a vegetarian myself, this just feels extra cool! A great throwback to the Miz Cracker episode in the BA kitchen. Keep slaying, Carla! Xx

Made this and, unsurprisingly, it's just incredible. To accommodate a dairy-free option I used Miyoko's classic chive 'cheese' instead of goat cheese and it was perfection. And DUDE since we already had some pickled reds in the fridge I decided to do a quickle of julienned carrots and golden beets... I will now require a jar of those in my fridge for the rest of my life, they are seriously fantastic.

My daughter shared with me an ‘avocado hack’: Place a newly bought almost ripe avocado in a container filled with water where the avocado is completely submerged. Store in the refrigerator until ready to use. She told me she ate an avocado that had been stored for a month and looked / tasted completely fresh.
I’ve been a vegetarian for 12 years and avocado comes on *everything* veggie. I’m allergic and also, I think avocado is *disgusting.* This sandwich looks amazing and I’m so excited to try it 💚💖💛

I always appreciate Carla's consideration of different dietary needs (vegan/veg swaps, pork/beef subs etc) and making sure the recipe will still be delicious regardless of substitutions, but this is a whole new level! I love vegetarian/vegan food but HATE avocado. and the avocado boom in the last 10 years or so ensures that theyre on EVERYTHING. I appreciate not building the entire sandwich around the green mush of sadness

As a California girl I can get down with this version of the California Veg Sandwich. The goat cheese part alone 🤤 Also love the fact that it’s on focaccia and not a very seedy bread (I don’t like seedy breads 🥲).
As a California native, I love this recipe...it looks amazing 💓and the chive-y cheese can replace avocado...they're both interchangeable in this situation, something rich and fatty (with a pickle-y veggie and bread) 🥰

THANK YOU for spreading the word about the weirdness of avocado and semi-hard cheese on sandwiches. I'm pretty unfussy, but lots of sandwich shops and delis just default to avocado when you order vegetarian. The logic makes sense, as avocado can be quite luxurious and they don't want to take away an ingredient while charging the same, but it leads to this highly awkward combination.
Avocado is probably favored because it turns a veggie sandwich into a vegan one. Places don't know how to season their avocado, though. Plain is not good enough.

I suspect the pickles last much longer than five days in the fridge, but they might lose some of their crunch and colo(u)r after that, and Carla wouldn't want that for us.

Love the layer of "luh-TOOSE" at 14:29. Was that something one of your kids used to say? This looks delicious enough to serve to the meat lovers in my family. I don't think they'll be asking "Where's the meat?" with all those flavours and textures happening.
I'm jealous of your bean sprouts. Supermarkets where I live stopped selling/carrying bean sprouts years ago because of possible Salmonella E.coli. issues because of the way they're grown. Canned sprouts are discussing.
FWIW, I soak dried mung beans in water for a day, drain, then rinse them 2x daily thereafter in a big glass jar fitted with a mesh lid. In about 2 -3 days, I get bean sprouts. Not as big as the ones Carla was using, but still great tasting.
@@dianeleirer9878 I do sprouts that way, too. Mostly alfalfa because I like them on sandwiches. The sprouts Carla is using are the ones I like to put in Vietnamese spring rolls, which I make quite frequently. I recently got those lids on Amazon, (much easier than cheesecloth) then proceeded to break the big glass jar I used.
@@dolphinately Yes, there is one here, but it's farther than I like to drive. I have stocked up on Asian supplies there. So much cheaper than the supermarkets.
As a west coaster, formerly of California, I've never heard of a California Veggie sandwich. Is this an east coast thing? We have veggie sandwiches out here, but they're literally vegetarian sandwiches - the ingredients are varied from place to place.
