Just a suggestion as a throwaway panel alternative. When we go through a thrift store we grab 9 * 13, 8 by 8, whatever we can find that is a useful size and use those. And then we just tell people but they can keep it, donate it, move it on. Often they're cheaper than throw away!
What a great idea for the small bottles of wine!!! I don't drink it often and so I never have it around for cooking. I will have to get some small bottles for the pantry.
I have an "extra easy" lasagna recipe that I found years ago. I just use regular lasagna noodles and add about 1/4 cup of water around the edges. It turns out great every time!
I bought a 2nd bowl for my kitchenaid as a back up. I can be baking a batch of cookies while mixing a different cookie recipe. Kneading bread dough while letting another one to rise. Investing in another bowl for my kitchenaid is a lot cheaper than buying a Bosch mixer.
You can use regular noodles instead of buying the no boil noodles. Just make the sauce more 'liquidy'. :-) I make lasagna for LasagnaLove and delivery to families. It saves so much time, not having to boil the noodles. It works great!!!!!!!!
Totally agree about baking bread at home! So many people are afraid of yeasted baking, but when I started, it just felt so natural. Like the genes of my ancestors who made bread daily were kicking in. I encourage everyone to try it!
When I take dinners to families I try to also have a dessert and something for breakfast the next day. I think it takes a little more pressure off of the family, by not having to think about breakfast.
I'm Italian and we always use red wine for anything marinara based or real beefy/meaty based. We use white wine in like chicken or fish dishes. However, thinking about it, I'm sure either way, white or red, both would be delicious. So its a win win. Love cooking with wine..
I use roasted chicken deli meat in place of the noodles when I make lasagna. It taste amazing, and I say that being a pasta junkie. To prove that, different shape pasta taste different, and fresh homemade is the best. lol
I chop and freeze bell peppers regularly (because I like them in my food a lot) so when making sauce I like to put some green and yellow Bell pepper, in the sauce just for some color. it thaws quick so not a big deal to ad in. Just an idea to toss out for consideration. your lasagna looks delicious!
My youngest doesn't like the crispy cheesy top layer of lasagna either!!! It's moments like this where I ask myself, "If she even my daughter?". LOL. It's my favourite part.

I find the hardest thing about making lasagna from scratch without a recipe is getting the moisture level right. It's funny, but I find it lower stress to make my own lasagna noodles, which are cooked before assembly, than braving a no-cook box of noodles. Either too much or especially too little moisture can mess it up...but lasagna in soup is better than crunchy noodles!
When I make lasagna and realize I have pasta that's supposed to be boiled I just run the pasta sheets under water on both sides before placing it in the pan. Works every time, although admittedly I make my sauce a tad more "saucy" than yours.
I wonder if spreading the cheese mixture on the planks before putting them in the pan, kinda like a cracker, would be efficient. My husband says making things harder by trying to make it "better" is my super power🙄
White wine in tomato-based sauces isn't uncommon. It will cut through the acidity of the tomatoes. I use Pinot Grigio, Chardonnay and or Sauvigon Blanc. Please note: Never ever use a product labeled as cooking wine.
Yes, any bread dough recipe would work and just use the dough setting. I think this particular recipe would need to be cut in at least half for it to fit a bread machine
