Before black bean garlic sauce became available, I used to take about 2 TBSP beans and soak for about 15 min and then pound the softened beans garlic and ginger into a past and cook with it. Never thought about how a restaurant would have to mass produce the sauce. It is educational to see your restaurant methods.
@@BackyardChef after you mentioned that it was a different type of black bean, I googled it. Oh my gosh! The black bean I refer to is the Mexican "turtle black bean". The one you refer to is Asian black soybean. There are more as well.👀 thankyou for continuing to edumacate me/us.
I like Chinese dishes with black beans,and I have bought the beans in a Chinese market,but never knew how to make them like you do in this recipe,and I think my friend is driving Friday to the Chinese store so I will get a package of the dried ones, and try your very good looking recipe.I need fish,and pork kidneys, the Chinese supermarket is the place for the freshest, and cheapest,and always have bargains on greens,and mushrooms.😊
You did it again, Rik. Very simple and easy recipe that tastes great. I like to add red and Szechuan peppers to mine. Your recipe uses oil, but you can also use rice vinegar and soy sauce instead. It's a similar but much lighter version for people who don't want all the oil in their food.
I have read that these beans are some of the most nutritious of legumes. I like them Korean style with noodles, or in Mexican food. I would like to try my hand at fermenting them Chinese style from scratch someday. This is an interesting version, thanks Rik.
The tinned ones are a different bean - The Chinese one's are ferment with ginger and If memory serves me correctly they are soy beans. Thank you. Best, Rik
I've been avoiding seed/plant oils since 2021 so I'm thinking this was probably made before seed oils. If so, it would have been made with animal fat and the ideal fat would probably have been pork fat. Do you know much about the Asian history of fats used for cooking before industrial oils?

Korean,and Chinese black beans are made from black soy beans.Mexican black beans are from black turtle beans,different from each other.
