This looks almost identical to something my grandma makes but it's her speciality so she's never shared the recipe 😂 I think hers must have some ground almonds in the cakey bit, but I'm sure this version is just as delicious and I'll definitely be giving it a go 😊
I love recipes for smaller batch desserts and not a 9x13. It's only me and my husband so we can waste a bigger serving size. This looks so yummy. I love raspberry jam!

Sorry to be nosy, lol. I don't think apple sauce would be thick or sweet enough. Maybe cook it down to intensify the flavour, sweetness & consistency. I was thinking of apple as well, but I was going to use fresh apples in chunks, cooked, so it's almost like pie filling + Cinnamon*
So, strawberries are in season in the old pacific northwest but I've never been a fan of our shortcakes. If I made this with strawberry jam and served with fresh strawberries and cream, it would be everything a strawberry shortcake should be. Thanks for giving me the idea, can't wait to try!

I wish we had that size of pan more commonly available in Canada. The closest is 8x8" which is almost equals the same surface size.
