Hi from Spain, I made this a few days ago and my husband loves it. He has asked me to make it again using ginger jam. Just for information, I served it with custard and as there was some left over I froze it along with the custard in portions. It was exactly the same when I reheated it in the microwave. One piece is too many and the whole pan isn't enough!! 😄. I always get asked for the recipe. My advice: Make it with sugar free jam. Diabetics can enjoy it, too.
Hello chef....I made these as soon as I watched your video. I used peach jam. I cut them into smaller pieces and set each one into a holiday cup cake paper. I froze half of the pan this way to make cookie platters as gifts for Christmas. The other half of the pan, was served right away.....I'm making another pan today with homemade raspberry jam. They will also be shared at Christmas time as I have 7 holiday platters to make as gifts for my neighbors. Keep those easy recipes coming please.

My husband's grandmother made these for his school lunchbox in the 1970's. I always thought it was a 'butter rubbed in the flour' recipe, not a fan of that process, so never made this slice. I will try making it in different flavours as you suggested. Thank you.
