And to kick it up a notch, we use our homemade Salted Curd Chilli in the tadka for that perfect spiciness. Curd rice is simply comfort food at its finest!

There are different options for food recipes to make it healthy. Just don't forget that. Btw Ayurveda also says u should not eat fish and curd together, but aren't there people who eat it together😂😂. I was hesitant to use the same amount of milk as curd but the curd rice surprisingly turned out amazing. I honestly wish i hadnt put a tadka because the plain salted curd rice was in itself so good. Thank you for the recipe
Superb, Chef.. My mom makes curd rice for travel or for later use this way. She mashes the rice when its hot, and adds hot milk, mixes and leaves for a couple of minutes. The rice thickens. Then she adds hot milk again , as much milk to make the rice sort of semi solid. Then let's it cool. Then she adds a tbsp of curd , salt and tadka of mustard seeds, finely minced ginger, Hong and curry leaves. This doesn't become sour easily. Can be used even after 2 days- just add milk or water and mix when serving. Helpful during hot summer for packed lunches.

It's a comfort food that I cherish since my childhood. Mom used give to me for lunch during my school days. I make for my kids now and they like it too.
To tell you the truth, I am not much of a curd rice fan (even though my friends keep on going about the merits of the thing) but the way you made sounds interesting and textural. And adding ginger, chillies and promogranate brings in the freshness that is so often lacking curd rice atleast the one I have had so far. Use of milk seems counter intuitive along with curd but it could be the single most important factor that could help in controlling the sourness that often ruins the curd rice experience. Kudos chef!! I would definitely try this recipe!

Chef being tamilan we follow few steps more , in tadka mostly we add mustard and raw peanut. And also add two to three spoons of fresh cream it gives great texture to the food.

Soul comforting recipe Chef. I make curd rice by setting the curds in the rice itself along with the tadka. Once the curd is set. Keep the curd rice in the fridge for sometime before serving. This chilled recipe of curd rice is awesome. Try it !

The combination of milk mixed with curd tends to keep the curd rice still moist as the curd continues to curdle the milk contents in it. This is recommended when the consumption is much later than the preparation as otherwise the rice tends to soak in the curd making the preparation quite stiff instead of a nice mushy texture. It also helps in balancing the sourness levels which buttermilk cannot do.

Actually, it is a good idea to add a few ice cubes to the curd rice at the end and bury it in the dish. It will be it chilled till it is eaten and will also provide water that the rice needs

Iss mein Dhoodh ka quantity kam hai Aur curd ka quantity jyada hai so little bit salt is not harmful.

Dahi chawal is a regular dish at home every week but I have never added milk in it , this time will try with milk too ❤️❤️😘🥰
Adding milk and a little curd is the way to do it. That way it will not go sour. Add ice cubes in summer after the curds are set.
In the parts of Telangana, fried cashew nuts are widely used In curd rice. Tastes even better :-)
