  • Here is one of my favorite quotes,
    'When life gives you lemons, make lemonade!'
    I made lemon mousse though! 😆
    I hope you like it!
    Lemon insert
    1 Diced apple (I ate a piece to taste lol)
    Mint chopped
    Water 85g
    lemon juice 40g
    Lemon zest 1
    Sugar 20g
    1/2 sheet of Gelatin
    Lemon mousse
    1 egg (50g)
    Sugar 55g
    Lemon juice 40g
    Butter 75g (room temp.)
    1/2 Sheet of Gelatin
    Whipped cream 180g
    *You can make 8 Lemons from this recipe
    Dipping Chocolate
    White chocolate 225g
    Cocoa butter 38g
    Canola oil 22g
    Cocoa yellow butter(Citrus) 60g
    *The amount of dipping chocolate recipe is way more than enough but when you make dipping chocolate, always make the extra for better dipping! You can use the leftover for cake pops, icecream glaze or something!
    *The temperature of the chocolate when dipping was around 38C!

    오늘 외출하러 나갔다가 추워서 깜놀!
    여름이 물씬 느껴지는 디저트를 뒷북으로 들고 왔지 뭐예요. 푸핫
    빨리 가을 디저트 구상해야겠어요!!!
    늘 부족한게 너무 많지만, 시청해주시는 여러분들 너무 감사해요!
    레몬 인서트
    사과 1개 (사실 작은 한 쪽은 제 입으로 들어갔어요 ㅋㅋ)
    민트 잎 3-4개
    물 85g
    레몬즙 40g
    레몬제스트 1개
    설탕 20g
    판젤라틴 1/2장
    레몬무스
    계란 1개 (50g)
    설탕 55g
    레몬즙40g
    무염버터 75g (실온상태)
    판젤라틴 1/2 장
    생크림 180g
    *위 레시피로 총 8개의 레몬을 만들 수 있어요
    초콜릿 디핑글레이즈
    화이트 초콜릿 225g
    코코아버터38g
    카놀라유22g
    코코아 버터 노랑 (시트러스) 60g
    필요하신 양보다 많은 레시피이지만, 영상에서처럼 디핑하실 때는 좀 넉넉히 푹 담궜다가 빼야 글레이즈가 이쁘게 된답니다.
    남은 글레이즈로 케익팝이나 아이스크림 같은걸 디핑해서 먹어도 맛있어요!
    아 그리고, 초콜릿을 디핑해줄 때, 온도는 37-38도 정도였어요!

    omg in the beginning I didn’t know that you were showing the actual lemon mousse dessert- I thought they were real lemons! I don’t have lemon silicone molds, only hemisphere molds so I might try it with those! Thank you for the amazing recipe!

    영상 항상 너무 감사히 잘 보고 있어요. 재료중에 노랑코코아버터가 있는데… 한국에서는 구하기 힘든 것 같아서요. 그냥 코코아 버터는 구할 수 있고요. 분량의 카카오 버터에 +초콜릿색소 옐로우로 사용해도 될까요?

    더보기의 레시피를 사용했을 때 레몬이 합쳤을때 8개가 나오는건지 (즉 단면 모양이 16개) 아니면 단면 모양이 8개가 나와서 합친 모양이 4개가 나오는건지 궁금합니다.

    안녕하세요 무스케이크를 연습중인데
    레시피없이 감으로만 하고있습니다.
    제일문제가.. 무스를 몰드에 넣고 굳히는게 문제인데 젤라틴이 부족한건지 온도가 부족한건지 얼리는 시간이 부족한건지 냉동실에서 완전히 깡깡 얼지를 않아 꺼낼때 겉면이 자꾸 뭉개지는 현상이 일어납니다 뭐때문에 그럴지 조언좀 주시면 정말 감사하겠습니다 ㅜㅜ

    디핑하고나면 물기가 너무 많이 생기는데 방법이 없을까요?ㅠㅠ

      무스의 차가운 온도에 비해 글레이즈가 따뜻하기 때문에 어느정도 물기가 생기긴 해요. 페이퍼타올로 닦아주심 좋아요. 너무 많이 생긴다면, 온도차가 너무 컸다든지, 집 온도가 너무 더웠다든지 하는 원인을 생각해볼 수 있을 것 같아요. 글레이즈 한다음 밖에다 두지 마시고, 냉장 보관하시는 걸 추천드려요! (온도차를 줄일수록 물이 덜 생기거든요)

      냉동고에서 꺼내신지 얼마 안되신거면 얼어있을 거에요. 해동될 때까지 실온에서 기다려주셔야 해요! 😌
