You need to adjust the height on your mixer. There is a screw adjustment to raise or lower the mixer head. Thats why your sides of the bowl are not getting mixed with the bottom of the bowl. Some people dont know there is any adjustment, well there is!! 😊
thank you for the information on the mixer, we appreciate it
@@TwistedMikes wow, can u not just leave 1 comment, this is not a conversation sight , ask ur ? or recommend , but leaving tons of comments every few mins is just nonsense , sry but thats jmo
Where is that adjustment?? I didn't know that either.
@@galemartin3277I am not sure what stove you have. If you have an electric stove you might be able to set the temperature at 80. If not, just put some plastic wrap or a clean cloth on top of bowl and let it rise at room temperature until your dough doubles in size each time.
Nobody ever reads their owners manual 🤣
Growing up in Czechoslovakia, I have been helping my mom make Moravian Kolaches since I was a kid. Lately, I make a double batch of them to share with my daughter's family. I make them stuffed with the sweet cottage cheese, with half of a canned apricot. I make them about once a month. When and where did YOU first learn how to make Kolaches? I like how you allow them extra space on the baking pan, so they would not touch. I like it when they are perfectly round. After all, the Czech word Koláč is derived from the word kolo, which means circle. I understand that kolaches are quite popular in Texas, where there is a large Czech community.
The other toppings sound delicious. We make them on occasion, but not that often, maybe once every year or two. They taste delicious, but while trying to do a TH-cam channel we end up doing a lot of other recipes. It is a great tradition, especially around the holidays. Thank you for commenting and giving us your versions of the kolaches. We appreciate it.
Yes kolaches are very popular in Texas. There is a Czech community about 15 miles from Waco The village bakery there sells the best ones around.
My grandparents were from Romania. We grew up enjoying similar pastries with prune, poppyseed, walnut and apricot fillings. It seems most countries in and around Europe enjoyed their own versions of sweet doughs and these lovely fillings. How wonderful that these recipes haven’t been lost over time. Btw, my grandmothers sweetened “farmer’s cheese” for their fillings.
@@TheJaniceJoy sounds delicious, we appreciate you watching and telling us about your amazing memories. Have a great dnay
@@TheJaniceJoy Yes, I add sugar, eg yolk, vanilla extract and lemon zest to the cheese and some golden raisins. Here in Canada, the they call your farmer's cheese "pressed cottage cheese". Same cheese, just different name.

I just finished making these for the first time. I followed your recipe and directions exactly. They are delicious! My husband is swooning. You are right in saying they are time consuming. However, they are not labour intensive and you can do other things while waiting on them to raise. Plus, you get enough to feed a lot of people. Thank you kindly for taking the time to share.
We are glad that your family enjoyed this recipe. They are delicious. Thank you for watching and letting us know how they turned out.

My grandfather made us these. He was from Moravia. I am thankful for the recipe. He use to use a clean sock filled with some flour to pounce in each kolache and then filled them with prune or cottage cheese filling. So many years ago and yet I can taste them as I write this. Thank you.
That is an amazing memory. Thank you for sharing it. Food can bring back some amazing memories.
Hot water in the oven is such a good tip.

Thank you for many things on this video. First thank you for the tips on how to make the recipe. Secondly thank you for this delicious recipe. And thirdly thank you for no music and just starting out with the recipe and moving it along. (And with no fancy spoons or bowls lol)
Thank you flor watching we really appreciate it. We are not a fan of music in cooking videos, and the items we cook with are items we have collected over the years.
Thank you so much, I think I might make these for New Years Day. I have made bread for years but never made Kolaches. Thank you for your video and helpful instructions.
Thank you for watching, we really appreciate it. Give them a try, they are delicious
I loved this recipe. I made my dough in the bread machine and actually forgot about it. Four hours later I removed it from the bread machine and refrigerated it. The bread machine does the first rise; then I left it overnight. Did everything else the same and they were so billowy and delicious. Thank you for this wonderful recipe.

I just happily discovered your channel and these pastries look delicious! I’ve never made anything like that, but I do intend to give them a try before long.
Two requests: I would really love to see your face in the beginning of the video, just for a minute or two to say “hello, I’m so & so & this recipe came from my grandmother (or whoever)”;
Also, I don’t know the history of these, so I would really have appreciated that. It’s just always nice to see who it is making these lovely things, it adds that personal touch. Thanks so much and happy holidays! 🎄

What a lovely video. I’m going to make these today!
Thank you. They are delicious. Thank you for watching and let us know is how they turned out
Love your video! I’m of Czech descent and my mom made this a lot. But she rolled out the dough which seems to be old school. I like the way you formed them, a lot less messy. My question is can you fill these with other fillings like jam, and do they freeze well?
Yes, you can use jam. I don’t know about freezing them. I am sure you could, but they won’t be as fresh and moist. Thank you for watching.
Looks beautiful

I used to makes these years ago, only with different fruit fillings along with cream cheese. My daughter just said this year I need to make again! Question, what make is your stove that has a bread proofing setting? I’m thinking of getting a new stove and that would handy to have as I make bread. Thanks for the video!
It is a delicious recipe. We love adding a little jelly in the middle. The oven proofed is set at 80 degrees.
I have a 6 burner gas Kitchen Aid convection oven that has a bread proofing setting
we love the bread proofing setting on ovens. It does make baking with yeast much easier. Thank you for watching and commenting. We appreciate it.@@sandielincoln

Nice video. These look great. Do they freeze well?
Thank you for watching. I wouldn’t freeze them. I think they would come out a little tougher and not as flavorful.
So delicious looking

Very nice!
Thank you! It is delicious. We appreciate you watching
Just put oven light on & it warms up enough to help with the rise
Yes, thank you for watching!
Easier option for the oven proofing. Turn the oven on to warm up to about 100F (or just until it feels like a hot day) and leave the oven light on. That’ll hold the temperature well.
Thank you for watching and for the advice, we appreciate w
Sooo, if you really want to have a great cheese filling the real Czech way you must add: 1. - a dash of rum, 2.- a dollop of heavy cream, or 3 tbsps of European(Irish) butter 3.Vanilla extract and chopped rum raisins. No flour but potato starch . I am Czech and have been baking for 60 years. Enjoy!
That sounds really good. Thank you for the information on what ingredients to add. Thank you for watching
Twisted Mike's recipe is amazing. I tried this exactly, not changing any ingredients and my family loved it. Every family has their own recipe. Thank you for your TH-cam step by step directions.

Potato starch replaces flour in the entire recipe?
I was thinking it was gonna be brown sugar. You could also add some cinnamon. Whenever I make an egg wash, I use water not milk and I use whatever's left for egg noodles.
Thank you for watching and letting us know le how you make them. We add water a lot on our egg wash as well.

Were your ingredients 100°-110° for the yeast to bloom?
Yes, make sure the liquid is hot enough for the yeast to bloom. Thank you for watching
I wonder if it would taste good using almond paste instead of lemon zest 🤔
It should still be tasty.
My Polish aunt made them with fruit filling. Hers were a little smaller.
I have been thinking I need to remake these with a fruit filling. They sound delicious. Thank you for watching and commenting
As I recall, my mother would just roll the dough Pugh and cut in circles with a biscuit cutter.
Thats a well you are making in the dough.
Thank you for watching
....When you said to put the doubled dough on, "slightly greased area" did you actually mean to say slightly floured area?....
Yes. Thank you for watching, we appreciate it
Can I make that without a mixer?
Yes, you will need to kneed your dough for a while making sure everything is well mixed.
❤👍

Maybe sprinkle them with red and green sugar. I don't like working with yeast
the red and green sugar would be great. A little jelly in the center of the cream would be great as well. Thank you for watching and commenting.

Ugh, I would have mixed the flour, sugar & salt before adding the yeast. Adding yeast on top of salt will "kill your yeast".
We appreciate you watching. Yes, adding too much salt can kill the yeast or slow down its progress
