Our bodies are hard-wired for sweets, so food manufacturers have deployed fifty-six types of sugar to add to their products, creating in us the expectation that everything should be cloying. We’ve evolved to prefer convenient meals, so three-fourths of the calories we get from groceries come from ready-to-eat foods.
    Moss goes on to show how the processed food industry-including major companies like Kraft Heinz, Nestlé, and PepsiCo-has not only tried to evade this troubling discovery about the addictiveness of food, but to exploit it.     I started a gourmet popcorn chain in 2014. I quickly realized how addictive and terrible the ingredients used in my products are for the health of my customers. I wouldn't eat most of my products, especially the sweet products and products with trans fats (that was almost every product I sold), and I still put on 40 pounds! I went from fit to fat fast and I didn't even eat the worst of the products! After 3 years of running and growing my business across the country, I walked away. I could no longer knowingly harm people and profit from it. I had to figure out a new way to make money and support myself, which was challenging, but it was worth it x1000! I've switched to a whole food, plant-based, SOS-free diet. I've lost just over 40 pounds from when I owned my business. I am thankful for all of the work Chef AJ, and others in this community, are doing!

    Years ago one of the employees at Burger King told me the salt shaker they use on their French fries has salt AND sugar in it. There's that unholy combination again.

    A few years ago I read a book called “The End of Overeating” by Dr. David A Kessler, which deals with this subject.
    Once I understood the science behind the foods and what companies were doing, I found it much easier to start making better choices. I’m also putting this book on my list. Great conversation AJ, thanks!

    Chef AJ, thank you for introducing us to this mans work! I’m going to read your books & his books.... I’m a sugary food addict since forever, do you recommend one book to start with?! I’m at a good weight now because of whole food “Low fat high carb” life BUT sugar keeps tripping me up into the hole 🕳!!!! I need help!! Do I read hooked first??

    I love all food, and can be a vegetarian or vegan, with supervision. If I eat any sugar or starch, it's all over. I can lose weight, but after a certain amount, it's as if a switch is thrown and I eat everything. That "fat organ".

    I got nothing new from this interview except that Doritos have enough oil in them to be lit on fire. Even if Michael Moss understands what the food industry is doing to make and keep consumers addicted to their products, he writes about it for his own profit, and he doesn't abstain from consuming things like potato chips. He may believe he has avoided the deleterious effects of highly processed food but his insides will prove different eventually.
