    I didn't want to like this...but this Chantilly cream is surprisingly good. It keeps it somewhat refreshing and easy to eat due to the salt and acidic content of the sauce.
    Also, Tonkatsu with a tartar like sauce is awesome.
    Chantilly Sauce:
    1/2C Heavy Whipping Cream (whipped)
    1T Minced Shallots
    1T Chopped Terragon
    1T Chopped Capers
    Tabasco (go for taste, I used about a teaspoon)
    Salt and Black Pepper - To Taste
    Standard Breading station:
    1C AP Flour
    1.5C Panko
    2 Whole Eggs +1T heavy Cream

    Just wanted to offer one of my own technique (not really mine) when making pork. I usually brine it for at least 5 hours after tenderizing it with a mallet and it comes out super soft. Can't wait to try this recipe out myself

    Hi, Chef! I just wanted to thank you so much for inspiring me to start cooking a lot more! Lately, I've been doing a self-made challenge with a few of my friends. In this challenge, we have to make a dish inspired by a topic we like, like last time the topic was Avatar the Last Airbender, and we had to make a dish that was inspired by one of the four nations. I ended up with the water nation so I decided to make salmon rice porridge. My thinking was this: I wanted to make something soupy since it's the water nation so I decided on some kind of porridge. I chose rice because ATLA has a ton of Asian influence and rice is a staple in Asian countries. And I chose to use salmon because I wanted some kind of seafood to go along with the theme of water tribe. I would love to see you do some kind of challenge like this in the future too! Thanks again!

      Awesome!! I love that idea. Recently, I tried making sourdough bread. Was a complete disaster (I used wrong kneading techniques and we had power failure 5mins into the baking which resulted in the dough not rising enough and forming a thick crust) 😂😂 but the taste was really good. Will do it again and hopefully this time it goes well.

    Asahi Actual name is Asahi Saiba and his special is a mix and match. He is able to take tools of those defeats and use them in combination to create new things. He has one glaring weakness though if you look closely. Notice that he didn’t do anything until souma did his dish. That’s because he mastered a special form that allows him to copy other chefs but lacks his own flavor. Literally under all the tools and abilities he has no original flavor, basically nothing he can build upon and that was his undoing.

    Hey..it's my dinner!..no seriously aside from the cream topping I make Tonkatsu at least 1 time a week..sometimes 2. I like to use seasoned flour..something like Zataran's or House Autry for chicken, it goes well enough with pork. I hit up my egg wash with a splash of Worchestire sauce (make sure it's the kind that has anchovies in the mix), a little mirin and just a bit of cracked black pepper. Before I do anything though, after I flatten and wash my pork I cut slits in the fat, keeps it from curling as much since I pan fry mine to not use as much oil and I'm only cooking for one person. If I don't feel like rice with it I'll turn it into a bootleg pork chop sandwich by putting it on a brioche bun with some mayo and have some fries or a baked potato with it. I got my mom to try making tonkatsu for me years ago..well over 15 at this point and I've been eating it on the regular ever since.

    This dish reminds me of country-fried steak, which in some regional dialects is called "Chicken-fried steak" because it is fried in the style of fried chicken with breading and such even though it is a pounded out beef cubed steak done in a similar way to this tonkatsu with white country gravy (similar in aesthetic to the chantilly sauce) made from flour and water usually combined with the rendered fat of the steak(s). That just goes to show how common threads in global food scenes connect somehow.

    The tonkatsu itself is really close to my mom's Austrian Style Pork Schnitzel recipe. The only difference is we use basic home made bread crumbs instead of panko, and we fry it in butter instead of oil.

      @@CHEFPKR Yes sir. She usually serves it with lemon and capers, and sometimes anchovies. The saltiness and acid cuts through the greasiness a lot like the episode describes. But I'm sure it would work well with this Chantilly sauce as well.

      Who is forgotten though? I think the latest episode just reminded us of the other side characters. However, the show does not intend to build up character development of the other characters in the first place in my opinion. It is all about Soma and Irina and a little touch to those really close to him like Megumi and Takumi. The rest are just side characters to fill in spaces. :D

    as i am from vienna , and this is basically a schnitzel , i do this very frequently , we dont really put sauce on our schnitzel , but i will definetly try this sometime

      Yeah, German here, and I was all "that's a schnitzel. Nothing special about it" (not a Viennese one, though, that would be made out of veal). You CAN do sauce on it, but honestly, I prefer not to. Because the sauce tends to make the crust mushy, even if you are putting it one shortly before biting into it, it always looses some of its crunch.

    Hey ChefPK, were the descriptions stated in the show accurate to how you would describe it? I believe it was more or less Heavy with flavor but still really light

    Love your content as always, but if it's okay, can you give different replacement for any alcohol based ingredients such As sake and wine.. Because i didnt consume alcohol..

      A lot of the time you can use beef/chocken/vegetable stock instead.

    Is grating the shalot ok instead of chopping? Seems faster and it‘s puree instead of little bits and pieces.

    Frankly, when doing a Schnitzel, I wouldn't exactly fry it. The best way it do simply heat some butter and put it into it. Turn it around once and as soon as the crust is ready, the pork in it has exacly the perfect consistence. It's actually easier than getting a steak right, at least imho.

      That was my first thought, but it's pretty far off imo. It's a LOT lighter tasting and with the things involved in this it's closer to tartar

    I thought Saiba started frying that katsu from room temperature oil first and gradually increasing the heat? If I remembered it right, it was emphasized during the tasting of Soma's dish. Well, I could be wrong or maybe I misunderstood the subs. Now then, because Saiba's dish was the exact copy of Soma's but BETTER, I though it was also fried with the exact method.

      Soma said he used a low temp frying method to make an airy flavor, but Asahi used his sauce to get that instead

    so I tried making this and the heavy whipping cream was way to rich also there is no real acid in the sauce like if it had vinegar maybe but to me when I tasted it it just tasted like heavy whipping cream the whipping cream was to rich in flavor it seems it would be better to just make a compound butter instead it does the same thing if the idea to just coat the fried pork loin in herbs also what peak did you whip this to I feel like that may of effected flavor but I dont know for sure
