SHOKUGEKI! This Chou Farci is something I would absolutely make again. There is a reason why they call Shinomiya the Magician of Legumes, and he wasn't even trying here. That's just impressive. The Chou Farci, or Cabbage rolls, are relatively easy to make and should be experimented with. Use different sauces, fillings, marinades...do anything you want!
Filling:
5oz Chicken Breast
2oz Heavy Cream
1 Egg
1Tbl Butter
Salt/Pepper
1/2 T Rosemary
1Tbl Sage
1Tbl Thyme
Vegetables:
2ea Chopped Asparagus
4ea Chopped Mushrooms
Faux Gras (optional)

@@CHEFPKR Thank you Chef :) Actually in Hungary where I am from, stuffed cabbage is a national food, had some this week but Shinomiya's is a little bit unique compared to the Hungarian kitchen. Will try to recreate this.

I saw the similiar one named jade parcel. I recommend to check it out. He boil the cabbage with baking soda instead of salt if im not wrong. And the cabbage looks much more green

Summer is beautiful with berries etc it's amazing and what not "only lasts a few weeks". We do have a beautiful fall with lots of mushrooms but once that's over it's just never ending darkness with nothing, no food, no fruit, no Vegetables, nothing... We do eat raindeer (Delicious!!) and go ice fishing but we have like almost no variety in produce what so ever.
Oh and everything is expensive and we have only one shop where you can buy alcohol and everything related to that is taboo and restricted (we have a lot of alcoholism as well) and we are one of most introverted and asocial people you will ever meet but pretty honest and straight forward and simple (I'm only partially Finnish therefore I'm kind of an exception).
Sauna is one of the best things in Finland thought and lots of lots of space and distancing actually Finnish people were freaking out with the Social distancing because we don't know how to be social xD lol
small advice because I know you would like to know this: 10:31 before slicing up the lemon in half, roll it a bit on the board while pressuring it on the top. Then, it will be super easy to squezze the juice out
Only thing I'd do differently is take a torch and crisp up that bacon as much as I could
My favorite way to eat cabbage is still when I can charcoal grilled it with spicy yakiniku sauce at Japanese BBQ buffet restaurant. Sadly, the one that I went to often and recently found, is now permanently closed due to local lock-down situation.

You can also boil the whole head in your salt solution before peeling the leaves, and the leaves are easier then to peel away without breakage.
That's true, but no reason to use the whole head imo
A thing i do for a better a better texture with meat pures is to pre puree the meat and then put it through a strainer and incorporate fats and spices afterwards while cooling the bowl with a coolpack. Its makes them very smooth while retaining a nice springy bite. I learned this from Chinese cooking, fishballs to be precise.
some alcohol company needs to sponsor this man so we can get cocktails paired with these meals. I remember a j-drama where a chef named Ken wet back in time and used his cooking skills to help Nobunaga.

Yo! You can freeze your cabbage for one day then thaw for one more, that will break down all the hard cells and you wont even have to blanch it at all. They will soften up and be malleable ;). Then you just finish cooking it with filling inside.

As someone who actually ate the Foie Gras version i would say.. the Cashew Butter would taste better (my Uncle is a chef and made many Shokugeki Dishes for Family Events). I can imagine the Nutty flavors of the Cashews and Miso work better then the Foie Gras alone. Very well done. Cant wait to try this Version. I will make it once the Corona lockdowns are gone :D
