On the latest Pipistreal Alpha Pro, you can. They are sold with full backup instruments, backup power on the G5, and dual navcom. But the approaches must be in VMC. You can file IFR but must remain in VMC. Hopefully once MOSAIC passes they can be flown in IMC with the proper ratings / currency.
I count 7 Pipistrel Alpha Trainers. All in 1 hanger. Does this place sell them? Do they still cost around $100,000? Some wheel pants. A 5-gallon auxiliary fuel tank. And a 104 HP Zipper Kit for a Rotax 912 80 HP engine, and you'd really have something.

It might be now. I learned in much older airplanes. 1955 Piper Supercub.

Yes. These are certified for IFR instruction and practice, but only in VFR conditions. They are not certified for actual IMC.
