Tupperware African Stew Recipe

- Today I am trying out a new recipe in the Tupperware Pressure Cooker. Today I tried the African Stew. Very simple products and fast to make.

African Stew Recipe:
Ingredients:
4 small chicken breasts cut into 1 inch slices
1 lb. Sweet potatoes, peeled and cubed
salt and pepper to taste
2 cloves garlic, minced
1 Tbl. Fresh ginger, grated
1 small hot chili pepper, chopped
1 (15 oz) can chopped tomatoes
1 tsp. Ground coriander
1/3 cup peanut butter
3 cilantro sprigs
¼ cup salted peanuts
Directions:
1- season the chicken breast with salt and pepper and place in bottom of Tupperware Microwave Pressure Cooker. Top with Sweet Potatoes
2- in med. Bowl, mix together garlic, ginger, onion chili pepper and tomatoes, pour over chicken and potatoes.
3- cover and lock Microwave Pressure Cooker. Microwave on high power 20 - 25 minutes.
4- remove from microwave and allow pressure to release naturally until indicator (yellow minion head) fully lowers; about 10 minutes
5 - remove cover and stir in coriander, peanut butter and cilantro. Sprinkle peanuts on top.
NOTE: For my 1250 watt microwave, I would cut the cook time back to 20 minutes.

My husband grew up in West Africa, so this stew would be best very welcome on our menu!
I have a lot of "old school" Tupperware. The Fridge Smart and the large marinade container are my favorites. Also the small chopping board.

Thank you! I did find for my wattage microwave, I could have done less time. But it was still good.
Hi you don’t spice the chicken ?
If you are talking about with salt and pepper, I hold back for my personal cooking due to health issues. You can season the meat to your likeness. I personally just cut back.
